Gluten-free Savory Chicken Salad

I was out of town and running low on my Udi’s gluten-free sandwich bread.  I wanted to pick some up while I was out, just in case. I went to Whole Foods in Napa, California and could not find Udi’s bread, but many other brands I lifted each one, looking for a light-weight bread like Udi’s, but they were all heavy, until…I found Rudi’s gluten-free bread! I thought, “Oh my! This is light!” I ended up not using it, but placed it in my sister’s freezer and brought it home with me. I was still using my Udi’s bread, until I realized I had not yet tried the Rudi’s bread. Wow! The texture is just like regular white bread! See the photo below for yourself. This made a great savory chicken salad sandwich.

Gluten Free Taco Pizza with Udi’s Gluten Free Pizza Crust

I received a couple of Udi’s Gluten Free Pizza Crust to review. Because I am allergic to tomatoes, I often end up having a no sauce pizza or a pesto pizza. This time I came up with a sauce I can have, taco sauce without tomatoes! Why didn’t I ever think of that before, I do not know why!  My husband tasted my pizza and liked it better than his!  This recipe is much lower in sodium than most pizzas, too! Udi’s gluten free pizza crust made it delicious, as well! Now when you don’t have time to make your own gluten free pizza dough, you know what to buy.

Gluten Free Oat Bread

I created this gluten free oat bread recipe to test out Cream Hill Estates’ Lara’s Gluten Free Oat Flour, but oat bread is already one of my favorites.  Oats are known to lower cholesterol, as well.  In a gluten-free diet we need fiber wherever we can get it, therefore, this is a good choice in a gluten free bread.  It is of medium weight, not as light as I wished for, but I will work on perfecting this recipe.  It is moist, though, which is what I was hoping for.  Enjoy!

Gluten Free Tuna Melt

I have never had a tuna melt before, but decided I could make a gluten-free tuna melt without cheese!  Of course, you can add cheese, if you desire. I wanted to add fish to my diet. I really do not like fish very much. I suppose there is a little child still left in me! Gluten Free Beef Tostadas

Gluten-free Beef Tostada

This is a fairly easy, yet a tasty gluten-free recipe. You can either purchase pre-made gluten-free brown rice tortillas, which I did this time from Trader Joe’s, or you can make your own. I have included the link to my white rice gluten-free tortillas below. If you are cooking for kids you’ll need to adjust the heat by reducing the chili powder and cumin. If you like it real spicy, then by all means add more! This recipe is set at a medium heat. Often stewed tomatoes are added to tostadas, but since I found out I am allergic to tomatoes I just add lots of spices and vegetables. Definitely consider adding tomatoes to yours! Yeast-Free Gluten Free Focaccia Bread

This gluten free focaccia bread is commercial yeast-free. If you are allergic to yeast you may try substituting the apple cider vinegar with a bit of 1/4 teaspoon of cream of tartar. I haven’t tried it myself, but any high acidic ingredient will do, lemon juice, etc. This is a hearty recipe, much like regular focaccia. Gluten Free Chicken Salad Recipe

I usually prefer chicken breasts, in gluten free chicken salad sandwiches, but I had a little left over dark meat chicken on hand, and because it was dark meat every time I looked at it, it reminded me of turkey. I then began to crave one of my old favorites, turkey, cream cheese and cranberry sauce sandwiches, which I have not had in years. But I usually like to eat a bit lighter than that for lunch, especially with all the appetizers I tested recently. Greek yogurt makes a great low-fat substitute for cream cheese, as well as mayonnaise, in sandwiches. Since I had dried cranberries on hand makes this recipe came close to my old favorite, but I added in a little feta cheese, which wasn’t really noticeable, but added flavor. A little added celery, walnuts and a touch of agave syrup did the trick! Get creative and make your own adjustments to this easy recipe. Perhaps some onion. What will you use? Savory Gluten Free French Toast

It is very popular now to serve savory dishes that are usually sweet. I have been wanting to create a savory french toast for some time now and finally did. I believe the type of bread you use sets a tone for this dish. You must use a gluten-free bread that is soft in texture and has holes in order for the egg mixture to be absorbed. I used Udi’s Gluten-free White Sandwich Bread. As soon as I started soaking the bread in the egg I could smell a sweetness to it which is not what I originally wanted. I find that most soft textured gluten-free breads are higher in sugar than heavier breads. I look forward to making this with Udi’s Gluten-free Whole Grain Bread and see if it is as sweet. However, I do have to say this was a tasty dish!  Adding the fresh ripened peaches tied it all together. This would make an ideal and easy brunch! Continue reading “Savory Gluten Free French Toast”

Gluten Free Asparagus Prosciutto Risotto

On a gluten free diet many of us eat a lot of rice. Gluten free risotto is a nice change. I am getting tired of the same old rice dishes and wanted to mix things up a bit. The only risotto recipes I have taste-tested were in fine Italian restaurants, but never cooked it myself. Imagine that! And I’m half Italian! Our family always ate the same asparagus recipe, boiled, and dipped in mayonnaise while eating. Traditional risotto includes parmesan cheese cooked into the rice. It makes it creamier, though it is pretty creamy alone because of the starch content of the arborio rice.  However, because prosciutto is already very salty I opted on just topping the rice off with a little parmesan cheese.
