While on our at-home vacation I wanted to make a few special dinners. Though this gluten-free pasta recipe is high in calorie, my husband may have ordered this dish at our favorite local Italian Restaurant, Nativo’s. However, we had it at home, all gluten-free! Gluten Free Beef Stew Chili

Gluten Free Chili Beef Stew

This gluten free beef stew recipe is actually another one of my gluten free chili recipes without tomatoes, (due to my allergies). Some assume chili is naturally gluten-free, but if you use a package chili mix it may very well contain wheat gluten. This chili recipe is thickened with potato starch, though you may use cornstarch, if that is all you have on hand. You may also add tomatoes to this recipe, if you wish, which will sweeten it up a bit, or you can sweeten it with sugar, agave nectar, stevia or a combination of any of these. It is wonderful over baked french fries, which is how I used it, or you can top it over baked potatoes or rice. It is only a tad spicy, so if you like it hot, spice it up a bit more using additional cumin and chili powder. The worcestershire sauce gives it more a beef stew flavor, therefore, if you desire more a chili flavor, just skip it or add more chili powder. Enjoy! Continue reading “Gluten Free Beef Stew Chili”

Gluten Free Taco Pizza with Udi’s Gluten Free Pizza Crust

I received a couple of Udi’s Gluten Free Pizza Crust to review. Because I am allergic to tomatoes, I often end up having a no sauce pizza or a pesto pizza. This time I came up with a sauce I can have, taco sauce without tomatoes! Why didn’t I ever think of that before, I do not know why!  My husband tasted my pizza and liked it better than his!  This recipe is much lower in sodium than most pizzas, too! Udi’s gluten free pizza crust made it delicious, as well! Now when you don’t have time to make your own gluten free pizza dough, you know what to buy.

Gluten Free Pesto Mashed Potatoes

A month or so ago, I went to an Italian restaurant where I was served pesto mashed potatoes and it was one of those hitting my forehead type of moments, “Why didn’t I ever think of that?” They were fantastic, but lacking in butter. Perhaps they used olive oil only. They had just a hint of garlic and basil, not overbearing as you may expect. It didn’t taste like pesto pasta, nor garlic mashed potatoes, but a unique, flavorful mashed potato. I was able to duplicate the recipe, and wanted to share it with you, though my version has more butter than theirs. Rich, decadent and creamy! Gluten-free Meatloaf Muffins

A friend of a friend shared this recipe with me, but I had to alter it to make it gluten-free.  It can also be made dairy-free, if necessary. I added an alternative sauce, too! You really can use any sauce you like: spaghetti, Alfredo, pizza, brown gravy, etc. You also can add sauteed onion for additional flavor, especially if not using any sauce at all. You can remove any ingredients that you do not think children may enjoy. I hope you find this recipe useful. It is great for freezing, too! You can defrost as many as you need and reheat. This recipe is not technically gluten free pigs in a blanket, but gluten-free sausages in a blanket. It uses my gluten-free biscuit recipe. I learned while making them that the blankets need to be larger than 4″ in order to prevent from popping open, perhaps enough to overlap at least an inch. I would also suggest trying some egg wash (beaten egg) between the overlapped layers to keep them closed. You just have to make sure that the sausages are not hot while wrapping them. Gluten Free Beef Tostadas

Gluten-free Beef Tostada

This is a fairly easy, yet a tasty gluten-free recipe. You can either purchase pre-made gluten-free brown rice tortillas, which I did this time from Trader Joe’s, or you can make your own. I have included the link to my white rice gluten-free tortillas below. If you are cooking for kids you’ll need to adjust the heat by reducing the chili powder and cumin. If you like it real spicy, then by all means add more! This recipe is set at a medium heat. Often stewed tomatoes are added to tostadas, but since I found out I am allergic to tomatoes I just add lots of spices and vegetables. Definitely consider adding tomatoes to yours! Gluten Free Navy Beans

A gluten free navy beans recipe just like my mother used to make. The only difference is that she used to add a little tomato sauce for color and flavor. I used a little tomato-free gluten-free chipotle sauce. This is a great recipe to make and freeze individual portions for those busy days and nights, or just when you’re too tired to cook.
