I usually prefer chicken breasts, in gluten free chicken salad sandwiches, but I had a little left over dark meat chicken on hand, and because it was dark meat every time I looked at it, it reminded me of turkey. I then began to crave one of my old favorites, turkey, cream cheese and cranberry sauce sandwiches, which I have not had in years. But I usually like to eat a bit lighter than that for lunch, especially with all the appetizers I tested recently. Greek yogurt makes a great low-fat substitute for cream cheese, as well as mayonnaise, in sandwiches. Since I had dried cranberries on hand makes this recipe came close to my old favorite, but I added in a little feta cheese, which wasn’t really noticeable, but added flavor. A little added celery, walnuts and a touch of agave syrup did the trick! Get creative and make your own adjustments to this easy recipe. Perhaps some onion. What will you use? Gluten Free Teriyaki Steak
This gluten free teriyaki steak can be made with or without pineapple, but the pineapple makes a very nice compliment to the sweet and salty teriyaki sauce. Because it is grilled in the same pan the steak is, it tends not to be very sweet, but just lends a hint of sweetness. Serve over rice or just with a vegetable if you are a low-carber. Gluten Free Teriyaki Sauce Recipe (or Marinade)
I needed some gluten free teriyaki sauce and there was none in the house. What’s a girl to do? I gathered some of the traditional ingredients in teriyaki sauce and added a bit of pineapple juice for some extra nutrients. The base is tamari sauce. It is wonderful that San J makes gluten-free soy sauce, actually tamari sauce, because it contains no gluten. Tamari is a light soy sauce. All tamari sauces are made with more soy beans than regular soy sauce. Soy sauce is made from wheat and soy beans; therefore, those on a gluten free diet use Tamari. Savory Fruit Salad: Mango and Dried Cherry
Of course this fruit salad is gluten free, but it does not take special ingredients to make this recipe. It is fast to make, yet elegant to serve, with proper garnishes. October is mango season where I live in California. Perhaps the season is different where you are. Mangos tend to be overlooked during the fall, as many of our favorite fruits go out of season. Raw Banana Ice Cream
There is a YouTube video on how to make raw banana ice cream with a juicer. You just remove the skin from bananas; freeze the bananas, whole; remove the filter or screen from your juicer; feed them through and voila! – You have soft serve banana ice cream. However, what does one do if they do not have a juicer? You can even make ice cream without an ice cream maker and both without a juicer. This recipe is gluten-free, vegan, raw, refined sugar-free and sugar-free, as it is naturally sweetened. Enjoy this healthy treat!
Savory Gluten Free French Toast
It is very popular now to serve savory dishes that are usually sweet. I have been wanting to create a savory french toast for some time now and finally did. I believe the type of bread you use sets a tone for this dish. You must use a gluten-free bread that is soft in texture and has holes in order for the egg mixture to be absorbed. I used Udi’s Gluten-free White Sandwich Bread. As soon as I started soaking the bread in the egg I could smell a sweetness to it which is not what I originally wanted. I find that most soft textured gluten-free breads are higher in sugar than heavier breads. I look forward to making this with Udi’s Gluten-free Whole Grain Bread and see if it is as sweet. Gluten Free Biscuits
I really wanted to make gluten free biscuits a little healthier than the traditional recipes. I did not use corn starch in this recipe, therefore it is corn-free, depending upon which margarine you use. I used Smart Balance Spread versus the traditional butter. I am looking forward to trying one of the Earth Balance Spreads, too. Other changes I made were substituting agave syrup for sugar; and instead of using buttermilk I used non-fat Greek yogurt. This recipe is not dairy-free due to the Greek yogurt, but Greek yogurt is more easily digested compared to regular dairy products. If you haven’t had biscuits since you started your gluten-free diet I believe you will find these biscuits very delicious! They are definitely lighter than the gluten version I used to make. Baked French Fries Mozzarella and Gravy with Optional Beef Stew
Gluten Free Gourmet Diner Food – made healthier!
I was watching the Best Thing I Ever Ate and they explained how they made french fries with Mozzarella cheese and gravy. Boy did they had my mouth watering! In their version, the french fries were soaked to remove some starch; swirled in a bowl of fresh garlic; deep fried in duck fat once; then again 24 hours later; and topped with Mozzarella cheese and brown gravy. I chose to make my Baked French Fry Recipe to make it lower in fat and calories, and threw in some of my beef stew with wine simmered gravy made with very lean beef with all excess fat removed. It was heavenly! You can even use bison. Have fun with this one! Add your favorite meat or leave it as is. I’m sure the kids will love this, too! – similar to chili cheese fries, but a bit healthier! Gluten Free Sauteed Napa Cabbage
I have been doing very well on my gluten free diet; yet another gluten free meal! I had a Napa cabbage in my frig waiting to make another batch of gluten free potstickers, but never got around to it. I did not have another Napa cabbage recipe and thought that sauteed Napa cabbage would be a way to make a quick meal. My intention was to eat it all up as a main dish, without adding anything to it, but I was starving and because of the tamari sauce it really needed to be served over rice, which was perfect. So, I thought since I had leftover roast, already sliced, why not add some of that in, as well. It was great! You can keep this recipe vegetarian/vegan, but I am sure it would be fantastic with chicken or pork (chops or bacon), as well, or over rice or noodles, plain!
