Peach and Mozzarella Gluten Free Pasta Salad & Peach Vinaigrette
Summer heat already gotcha down? Try a refreshing salad instead of hot meal. Many people have trouble making gluten free pasta salad in advance. Rice pasta gets hard when refrigerated overnight. There are a couple of tricks to get you to succeed,though. Don’t use rice pasta. Try pasta made from other grains such as corn, quinoa, etc. If you must buy one that contains rice, at least make sure it is a mixture of other grains, too. Then, prior to refrigerating, add dressing, or at least oil, to the pasta to keep it soft. Keep in mind that gluten free pasta absorbs liquid quickly. Enjoy! Single Serve Gluten Free Microwave Cheesecake
Whoever thought you could make a gluten free microwave cheesecake? You can! Though this is one of those recipes that varies per microwave and per your tastes. However, when you’re craving something sweet and want to make dessert for one, this may work for you. We love it in our house! It’s a bit pastier than a traditional cheesecake, but with my homemade graham cracker crumbs and your favorite cheesecake topping, it’s scrumptious. I had my recipe testers for my upcoming cookbook test this recipe. The majority of the testers enjoyed it. Some had to adjust the cooking times or temperature. Gourmet Gluten Free Chili Recipe with Bacon
I hadn’t made chili with tomatoes for my husband in over a decade. Last weekend I was cleaning out our freezer and found a little tomato paste. So, I decided to use it in some chili for him. He enjoyed this recipe so much, I had to share it with it you. However, to be honest, he loves all of my gluten free chili recipes, which most are tomato-free. Gluten Free Tartiflette – Better Than Au Gratin Potatoes
Tartiflette is a French recipe made of potatoes, bacon and cream similar to au gratin potatoes, which originally did not contain cheese. Tartiflette contains lardon (cubed pork fat), but in the states, it may be easiest to use bacon. That’s why I use. Meanwhile, it is not a dish we can afford to consume on a regular basis, health-wise, but for special occasions or a treat, it is perfect, and so worth the effort.
