After a Facebook fan tried my Zucchini Hash Browns Recipe, she asked for a recipe that would hold the zucchini together. This is a wonderful solution; however, the two recipes are quite different. These gluten free zucchini cakes contain flour, specifically, my homemade gluten free bisquick (baking mix) recipe. They are lightly sweetened, yet savory, and fluffy, yet moist. Enjoy! Gluten Free Coleslaw Like KFC’s
For years I used to crave KFC’s coleslaw. Now that us gluten free eaters can no longer eat at KFC, I thought you would appreciate my KFC clone dressing. McCormick spices are gluten-free. Be sure to avoid using mayonnaise jars that gluten-eaters may have used if you are gluten intolerant. Double dipping knives in jars can leave cross-contamination. They dip in the mayo jar, spread it on their bread, and then dip in the jar again. Meanwhile, enjoy this gluten free coleslaw recipe. My guests thoroughly enjoyed it on the 4th of July and asked to take the leftover home. Continue reading “Gluten Free Coleslaw Like KFC’s”

Traditional Gluten Free Potato Salad
If you are attending a family reunion or having a backyard barbecue, this gluten free potato salad recipe can please everyone. You can divide the main ingredients into sections and add chopped pickles, sweet pickle relish or celery to each portion. Otherwise, just use your favorite. I was raised with my mother’s recipe, using celery and yellow onion and always enjoy it that way. However, my in-laws were raised with chopped pickles and others with sweet relish. So, I developed this recipe to please them all. My mother never added mustard to hers, but I use just a tad in this recipe. I hope you, your family, and friends enjoy this recipe as much as my family does. Continue reading “Traditional Gluten Free Potato Salad”

Creamy Asian Brown Rice Recipe (Naturally Gluten Free)
Each year when I go to the Expo West trade show, in Anaheim, I am honored with a package of a Tasty Bite product. This year they repeated my favorite product, Asian Vegetable Rice. I haven’t looked for it yet in my local store, but I was desperately craving some. So, I created this copycat Asian brown rice recipe. Theirs contains white rice, I believe. Therefore, this recipe contains more fiber, can be made sugar-free and dairy-free, and provides you with plenty of substitution choices. Make it spicy or mild. While the ingredients of Tasty Bite Asian Vegetable Rice is slightly different, this recipe is extremely delicious. You can turn it into a casserole by simply adding your favorite protein. I added cooked, cubed chicken breast. Enjoy! Continue reading “Creamy Asian Brown Rice Recipe (Naturally Gluten Free)”
