Gluten Free Soft Pretzels

I have been wanting to create a recipe for gluten free soft pretzels for some time, now, but I had read that some had trouble with coarse Kosher salt melting. Not wanting to take the chance, I waited until I found some pretzel salt online. I think it makes a big difference in taste and appearance, as pretzel salt is very white, almost powdery. After finding that even professional bakers have trouble making the perfect pretzel, brown and shiny, I discovered what works the best to achieve this. Gluten Free Bars – Apple Walnut (Sugar-Free)

I decided to create my own gluten free snack bars with healthier choices of gluten free flours, and free of many allergens. Though the bar is heavy due its content, you can definitely make them more cake-like with lighter weight flours such as rice, sorghum, millet, etc. Just adjust the baking time as needed. With my food allergies, tomatoes or salsa is a big no-no! I always make this tomato free gluten free guacamole when I make Mexican food or just want a creamy dip for tortilla chips. You don’t have to make this recipe without tomatoes, though. You can easily replace the chipotle sauce with a little salsa, and it’s just as easily made. Gluten Free Cornbread for Stuffing or Dessert

Last year I had a request for a good gluten free cornbread stuffing recipe, but I hadn’t created a gluten free cornbread recipe, and never got around to it. So, this year, it is my top priority. Once you have a good gluten free cornbread recipe you can make any stuffing recipe you choose using that gluten free cornbread. Preferably it should be a soft, absorbable one. This recipe is more of a cake-style cornbread recipe, however, you can adjust it to create a more traditional gluten free cornbread for stuffing.

I love theĀ dessert version. I think my hubby’s favorite foods are stuffing and cornbread, and he was in heaven with this gluten free corn bread recipe this morning, and he’s not 100% gluten free! There’s nothing quite like warm homemade gluten-free tortilla chips! Fresh out of the oven, they are fragrant and more flavorful. Though these chips have plenty of flavor and heat (kick), as they are basted with olive oil and chipotle sauce. If you use plain hot sauce you may wish to add a a little sweetener (honey, agave, stevia, etc.) to the marinade.
