Thyme Roasted Potatoes and Peppers and Onion – Oh My!

Potatoes and Peppers and Onion

I love this recipe for fingerling potatoes for a few reasons. I don’t have to peel the potatoes. I don’t have to slice small potatoes. The best thing is that they are incredibly delicious. I even surprised myself. I make them every chance I get! I can even eat them while on the Weight Watchers diet! We enjoy these potatoes more than mashed potatoes, and that says a lot. Make Ahead Gluten Free Four-Cheese Spinach Frittata

Gluten Free Spinach and Four Cheese Frittata

Not only can you make this frittata in advance, but it is better this way! Just steam or microwave to reheat. I know, you’re probably thinking that any time you’ve reheated leftover cooked or scrambled eggs, they were not so great. Well, there are two ingredients in this recipe that change all of the rules, and neither is cream cheese. This gluten free frittata turns out moist and has a balance of flavors and textures. Gluten Free Swiss Roll or Jelly Roll with Dulce de Leche (Pumpkin Spiced or Cinnamon)

Gluten Free Swiss Roll with Cinnamon

I’ve been in the kitchen attempting to achieve an exceptional gluten free Swiss roll recipe. It turned out perfectly moist and easy to roll. This is a feat for Swiss rolls as they are much thicker than jelly rolls. However, you can also make a jelly roll using this low-sugar recipe. Because jelly roll pans make a thinner and longer cake, you can achieve more swirls when you roll it. While I’ve supplied a recipe for cinnamon caramel filling, I also make a few other suggestions. Enjoy! Continue reading “Gluten Free Swiss Roll or Jelly Roll with Dulce de Leche (Pumpkin Spiced or Cinnamon)”

Gluten Free Raisin and Cranberry & Chickpea (or Walnut) Wild Rice Dressing – Stuffing

Gluten Free Wild Rice Dressing

I had a Facebook follower request that I publish a recipe for gluten free wild rice dressing. This is a unique and flavorful dressing. You may substitute the chickpeas for walnuts and the raisins and cranberries for all of one or the other. Use this as a gluten free stuffing recipe as well. Soft Gluten Free Garlic Naan – Oven-Baked or Stovetop

Oven-Baked Gluten Free Naan

Naan is the Indian version of flatbread. There are two versions, crisp/firm and the one I prefer, soft. The soft is to-die-for and is the only version I make! Everyone who has tried my skillet version raves about it. If you have a pizza stone, that version is even better! That’s all I make during the fall and winter. To avoid my kitchen from over-heating, I use the stovetop version during the summer months. Continue reading “Soft Gluten Free Garlic Naan – Oven-Baked or Stovetop”

Spicy Carrot Salad

Raw Spicy Carrot Salad`

Remember the old classic carrot and raisin salad? Well, this spicy carrot salad replaced that in our house a few years ago. The older we get, the spicier we enjoy our food. If you enjoy a little spice to your food, this is a must try. I like to keep some in the frig to use when I don’t have time to make a vegetable, usually weeknights. I hope you enjoy it as much as we have. Continue reading “Spicy Carrot Salad”

Gourmet Gluten Free Chili Recipe with Bacon

Gluten Free Chili with Tomato Paste

I hadn’t made chili with tomatoes for my husband in over a decade. Last weekend I was cleaning out our freezer and found a little tomato paste. So, I decided to use it in some chili for him. He enjoyed this recipe so much, I had to share it with it you. However, to be honest, he loves all of my gluten free chili recipes, which most are tomato-free. The bacon is not really noticeable as far as flavor goes, though it add plenty of flavor. If you haven’t ever made a chili recipe with bacon, now’s your chance. Enjoy! Gluten Free Tartiflette – Better Than Au Gratin Potatoes

Gluten Free Tartiflette

Tartiflette is a French recipe made of potatoes, bacon and cream similar to au gratin potatoes, which originally did not contain cheese. Tartiflette contains lardon (cubed pork fat), but in the states, it may be easiest to use bacon. That’s why I use. Meanwhile, it is not a dish we can afford to consume on a regular basis, health-wise, but for special occasions or a treat, it is perfect, and so worth the effort.
