Gluten Free Tartiflette – Better Than Au Gratin Potatoes
Tartiflette is a French recipe made of potatoes, bacon and cream similar to au gratin potatoes, which originally did not contain cheese. Tartiflette contains lardon (cubed pork fat), but in the states, it may be easiest to use bacon. That’s why I use. Meanwhile, it is not a dish we can afford to consume on a regular basis, health-wise, but for special occasions or a treat, it is perfect, and so worth the effort. Butterscotch Custard Recipe
While not all ready-made or boxed pudding brands are gluten free, you can always use naturally gluten free ingredients to make them from scratch. Instead of making gluten free pudding, which contains flour, I prefer custard. There isn’t any floury taste or texture in custard because it does not contain flour. While this may not occur in pudding with wheat flour, it does in gluten free pudding. In addition, gluten free flour creates a bit of slimy texture in pudding (too thick). Gluten Free Cheese and Spinach Gnocchi
Tuesday is National Cheese Lover’s Day. So, I thought I would share my latest gluten free recipe with you that contains cheese. It doesn’t contain everyday cheese, but either cottage cheese or ricotta cheese (which looks a lot like cottage cheese, but has smaller curds). It’s delicious!
I used 4% fat cottage cheese and chopped the curds up a little smaller. However, it appears pureeing it in a food processor would make it easier to roll. I also used Parmesan cheese in this recipe. I adapted the same recipe that I found in this month’s Sunset magazine. However, I use much less Parmesan and of course, gluten free ingredients instead of glutenous all-purpose flour. Meanwhile, you’ll have fun learning how to roll the gnocchi, which is the best way to make them. It leaves a nice sized space in which the sauce is trapped.
