Soft Gluten Free Buttermilk Dinner Rolls

I developed a soft gluten free dinner rolls recipe made with rice flour quite awhile ago. That recipe can also be made dairy free, if desired. I used buttermilk in that recipe. The recipe below, is more substantial as it has more structure. Though light in weight, it is not as light as the dairy-free version. With the use of buttermilk, they are a creamy goodness that my husband and I couldn’t stop eating at just one this afternoon. Enjoy!

Triple Chocolate Gluten Free Pumpkin Cheesecake & Crust

This is the best dessert I could possibly think of serving on Thanksgiving out of all of my gluten free dessert recipes. It not only fits in perfectly with the holiday, but it contains tons of chocolate. The filling contains white chocolate, cream cheese, and pumpkin puree. The crust of this gluten free pumpkin cheesecake is is made of chocolate cookies and is covered with a thin layer of pumpkin chocolate ganache. I took a shortcut by using Pamela’s Products mini chocolate cookies for the crust. They really are ideal. This recipe has received rave reviews, even by gluten-eaters. Gluten Free Cake Pops for Thanksgiving: Chocolate Acorns

It is extremely important to use a moist cake recipe when making gluten free cake pops. They turn out much smoother. You can use these cake pops for Thanksgiving as a decoration or as a dessert. In addition, they would make a lovely hostess gift. There’s nothing like bringing something you can actually eat to a dinner party. Acorns are synonymous with fall so I chose to make them this shape versus balls. I think they turned out adorable. I was very pleased. You can use gluten free candy or chopped nuts for he tops. Vegan Pumpkin Ice Cream

This is more of a sherbet than a vegan pumpkin ice cream, but is still extremely delicious for a diary free version. Since its development, I have discovered that adding one teaspoon of xanthan gum added to ice cream creates a more chewy texture. In this recipe you would need to mix about 1/2 teaspoon of gum with the oil. Note, that this is not a new recipe, but the original, published in 2010, seems to have vanished from this site. Enjoy! Gluten Free Cream Puff Recipe: Rings with Caramel Whipped Cream – Paris-Brest

Pate choux in French is a dough made simply with eggs, flour, and sugar. In America, this dough is used for cream puffs. This particular gluten free cream puff recipe is shaped as rings instead of the typical puff and is filled with a caramel whipped cream. The real Fench name for this dessert is Paris Brest. They make a spectacular presentation. I added toasted almond slices to mine and a sprinkle of confectioners’ sugar. You can use regular whipped cream and add strawberry sauce, as I did in my original gluten free cream puff recipe (see below link). Enjoy!
