Cauliflower au gratin is a great way to get that same rich, cheesy texture with a vegetable instead of potatoes. It reduces some of the carbs, as well. Though the calories in this dish are pretty high as it uses tons of cheese and cream. However, it makes a great dish for guests. Everything in moderation, right? This dish is a bit more saucier than au gratin potatoes as it does not take cauliflower as long to bake as potatoes. However extra sauce is not a bad thing at all. With summertime approaching, and our already warm weather, I am picturing backyard barbecues and picnics on the horizon. What better way to celebrate than with a healthier snack. Rather than reaching for processed potato chips, or expensive natural ones, you can make your own right at home. The great thing about homemade sweet potato chips is that they are lower in carbohydrates compared to regular chips. When making them at home you can use a healthier oil, as well. Butternut Squash Gluten Free Ravioli with Creamy Garlic Sauce

I absolutely adore Pasta Prima’s Gluten Free Butternut Squash Ravioli, however, now that I realize I am allergic to tapioca I cannot have them. So, to the drawing board I went and the results were nothing but spectacular! Making homemade gluten free ravioli is definitely a weekend project for those who work, but you can also make the filling a couple of days in advance. My husband enjoyed his with my Italian Spaghetti Sauce and I used the creamy garlic sauce (recipe provided below). I hope you enjoy these gluten free ravioli, as well. They are definitely a treat! In preparation for my upcoming butternut squash ravioli recipe I wanted to share my new roasted butternut squash recipe with you. Of course, once I create the ravioli recipe, I will link to this recipe. It is naturally gluten free, does not contain any allergens, and is very yummy! If plan on pureeing this for any reason, consider using a portion of butternut squash and and a portion of sweet potatoes. It makes it thicker and creamier without the use of cream or cheese. Gluten Free Stuffing Muffins

Stuffing, aka, dressing, is not just for the holidays. I find that a great way to use stale or over-baked bread is to make muffins with your gluten free stuffing. They freeze well, and you can rebake them as needed, making them a great side dish for weeknight meals. I had left out some of the water in my Gluten Free Millet Bread Recipe, and it turned out dry. Stuffing appears to be my answer, as to not waste it. I’m really glad that I did, as it was surprisingly delicious! I’m not one to use a whole grain bread for stuffing. Duchess Potatoes (Naturally Gluten Free)

Duchess potatoes, also known as duchesse potatoes, are a French dish, pommes de terre duchesse, consisting of seasoned mashed potatoes, made stiffer than traditional mashed potatoes, with the addition of egg, in this case, egg yolks. They are piped using a piping bag or device, and browned just enough to accent the design. Most recipes call for heavy whipping cream, however, my recipe below is a lower-fat version, and may be made dairy-free. Now you’re the duchess. Gluten Free Beef Tenderloin

This Christmas we only had a small amount of guest, therefore, serving a fine cut of meat was  inexpensive. If you have a special dinner coming up soon, consider a beef tenderloin, which is the same cut as filet mignon. It is easy to cut, carve, and serve. Because it is so tender and juicy, no gravy is required, however, if you’re serving it with mashed potatoes you can make gravy, if desired. I rarely measure ingredients for gravy, but have provided you with the ingredients and instructions below. There is nothing specific you need, besides oil and seasonings.
