I have had several requests for healthy gluten free recipes. With summertime here, I thought those of you with children would appreciate some ideas for healthy gluten free snacks.  I remember when I first began my gluten free diet in 2005, I tried a rice cake, and could barely finish it. It was so dry and tasteless. I resorted to snacking on watermelon instead. Things have changed, but I have learned different ways to consume rice cakes. Gluten Free Cream of Mushroom Soup

While there are brands of gluten free cream of mushroom soup, making a batch of homemade soup is always preferred. It contains more flavor and is healthier as you can control the amount of cream, sodium, etc. This soup may be made using chicken broth or mushroom broth made by soaking dried mushrooms in water (see Tips section). Gluten Free Shortbread Cookies Neapolitan-Style

Since it is summertime and the kids are on vacation, I though you’d appreciate colorful gluten free shortbread cookies. They are flavored in vanilla, almond, and chocolate, but you can choose other flavors and colors if you desire. Neapolitan is an Italian favorite, just like the ice cream. Chocolate Gluten Free Crepes

Crepes are a thin, moist pancake, and usually richer due to added butter. However, this gluten free crepes recipe may be made with healthier by using margarine, dairy free spread, and dairy free milk, if desired. Have you ever had gluten free fried ice cream, or http://ir-na.amazon-adany fried ice cream before? If not, you’re in for a fun and delicious treat. I love making this for guests. It is a real conversation maker. Traditionally, they are made with ground corn flakes, but if you cannot find any such as Glutino Corn Rice Flakes, you can use your favorite cereal such as Gluten Free Rice Krispies and others. Even ground gluten free graham crackers will work. You have a choice of either grinding the cereal finely or crushing them so they are left in little pieces. Gluten Free Chicken Korma (with Dairy-Free Option)

I have been wanting to develop a gluten free chicken korma recipe for quite some time, now. It is my favorite Indian dish next to butter chicken. Chicken korma is a spicy Indian dish using turmeric or curry plus other spices. Along with cream, it creates a rich, flavorful dish. You can adjust the heat in this gluten free chicken korma by reducing the cayenne pepper, ginger, and coriander, if necessary. It is of medium heat for an Indian dish, though if not accustomed to Indian food, you may think it is hot. Indian food contains many anti-inflammatory spices, making it a smart choice for an entree. My quest to develop a gluten free ice cream sandwich took much more time than I expected. I first tried to adapt my own moist Gluten-Free Dairy-Free Chocolate Cake recipe. I just left out the leaveners. However, it turned out very gummy and too chewy. In my search to adapt a gluten ice cream sandwich recipe, all recipes fell short of my expectations by viewing their photos. Fried Gluten Free Mozzarella Sticks Recipe

My husband’s favorite junk food snack is onion rings. He’s never had fried cheese, though. So I just had to create a gluten free mozzarella sticks recipe. It’s crunchy and flavorful. If you want them to have a deeper color, use the chili powder. To make them yellow, add a bit of turmeric. You can spice them up or give them an Italian flare. They make great appetizers or snacks. To provide flavor, add a bit of grated parmesan cheese. If you use the shaker kind, be sure to use a gluten-free brand such as Kraft. They’re also awesome dipped in the batter and then rolled in bread crumbs. That provides more texture. I also have a Gluten Free Cheese Sticks Recipe using bread crumbs. Gluten Free Chocolate Ice Cream Recipe (or Rocky Road)

Sunday, July 21 is National Ice Cream Day. I am mid perfecting a gluten free ice cream sandwich recipe and have been experimenting with a new gluten free chocolate ice cream recipe. I have made chocolate ice cream with a bit of xanthan gum, but this one turned out the best so far. Adding gum to homemade ice cream helps prevent crystals from forming and it provides a bit of chew. Using additional cream also helps prevent ice crystals and hard ice cream. There’s nothing worse than hard homemade ice cream. Enjoy!
