While this recipe is not new, I added some topping options, or shall I say sidings, as they go onto the sides of these delicious gluten free ice cream sandwiches. I did not use any marshmallows, which is typical of rocky road, but you can add them to the ice cream, if desired. Just be sure to use gluten free marshmallows such as Jeff Puff. I usually find the large Jeff Puff marshmallows at my local store and then cut them into smaller pieces when necessary.
This time, another change I made was that I made the sandwiches thinner, to cut back on calories. I hope they keep you cool this summer. Enjoy!

Delicious gluten free ice cream sandwiches with rocky road accents, providing more flavor and textures.
Ingredients:
- 1 recipe Gluten Free Ice Cream Sandwiches Recipe[http://glutenfreerecipebox.com/gluten-free-ice-cream-sandwiches/] using Dutch processed or standard GF cocoa powder (Add 1 additional tablespoon of flour blend)
- 1 cup nuts, chopped
- 1/2 cup gluten free chocolate chips
- Gluten free marshmallows (optional)
Instructions:
- Make the gluten free ice cream sandwiches as directed in the above link.
- Place the chopped nuts in a flat plate and roll the sides of the ice cream in the nuts.
- Place one chocolate chip about every inch or so and press into the ice cream halfway.
- Wrap or add to a container and freeze.
- Leave out at room temperature a few minutes prior to serving.
Tips
You can add your favorite crunchy toppings as substitutes. Try gluten free Rice Krispies or cornflakes.

I use Rodelle brand Dutch processed cocoa powder. In Central California, we have grocery store chains such as Safeway and Raley’s. I get my cocoa powder from either of these stores.
