How the does gluten-free diet fit into International Women’s Day and Pancake Day (also known as “Pancake Tuesday” and “Shrove Tuesday”?
Today is the day before the 40 days of Lent begins, a time for Christians and Catholics to begin fasting (eating less rich foods that give pleasure, in sacrifice). Pancakes are associated with the day before Lent because they are made from rich foods such as meat, egg, milk and sugar, actually a healthy choice!
Along with Pancake Day, it is International Women’s Day. I suggest us women who cook on a daily basis make pancakes for dinner! It not only honors Shrove Tuesday, but gives us women the break we deserve. Of course, you’ll need a gluten-free pancake recipe or two. See below for 2 choices, one healthy and suggested for diabetics (low-carb, high fiber) and the other high in carbs (bananas). The banana pancakes like the gluten filled ones I used to eat! Enjoy the pancakes and the break from cooking a difficult meal!
