Crepes are a thin, moist pancake, and usually richer due to added butter. However, this gluten free crepes recipe may be made with healthier by using margarine, dairy free spread, and dairy free milk, if desired. Sunday, July 21 is National Ice Cream Day. I am mid perfecting a gluten free ice cream sandwich recipe and have been experimenting with a new gluten free chocolate ice cream recipe. I have made chocolate ice cream with a bit of xanthan gum, but this one turned out the best so far. Adding gum to homemade ice cream helps prevent crystals from forming and it provides a bit of chew. Using additional cream also helps prevent ice crystals and hard ice cream. There’s nothing worse than hard homemade ice cream. Enjoy! Chocolate Chantilly – Rich Egg-Free Chocolate Mousse

The definitions of chantilly is 1. (of cream) flavored whipped cream, usually flavored with vanilla, but it can also be rum or liqueur; and 2. (of food) food prepared or served with whipped cream such as peach chantilly: peaches served with whipped cream which is usually flavored. Chocolate chantilly is a very strong flavored whipped chocolate which contains about 75% cocoa. Because the chocolate is so intense I decided to set some of it aside whip some heavy cream and powdered sugar into it. This enabled me to create a nice layer affect. It creates a beautiful presentation, and once you add whipped cream to the top, it all balances out nicely. With the hot weather we’ve been having, a nice cool dessert that doesn’t have to be baked or cooked long is just perfect. Enjoy! While I am still working on my gluten free matzo balls recipe, I thought I would share this wonderful gluten free flourless chocolate cake recipe with you all, but especially my Jewish readers. During Passover, it customary not to bake with certain grains. Some refrain from consuming grains altogether. Another custom is once matzo meal touches water it must be cooked within 18 minutes. In addition, yeast is avoided, and some avoid all leavening ingredients such as baking powder and/or baking soda. With Valentine’s Day fast approaching, I thought you’d enjoy this easy recipe for gluten free chocolate covered strawberries. You surely can save quite a bit of money making them yourself, and there is so many different and fun ways to decorate and display them. The only things you’ll need for this recipe are strawberries and your favorite gluten free chocolate. It doesn’t matter if it is milk chocolate or dark…whatever you enjoy eating.
