This is my version of Hershey’s “Perfectly Chocolate” Chocolate Cake. This gluten free chocolate cake recipe; however, is moister. I knew it would be a very moist cake just by reading the recipe. That’s the way my husband and I like our chocolate cake, rich and very moist! I told him that I was going to call this my chocolate mud cake; however, mud cakes are traditionally very gooey. Gluten Free Chocolate Mochi Ice Cream

Mochi is a naturally gluten-free Japanese dessert, served during Japanese New Year and year round, usually in the form of a very starch rice cake. However, that same starchy rice dough is used to wrap frozen balls of ice cream. Mochi ice cream is a unique dessert that everyone should, at least, try once! Kids would love to make them! The little ones can help. You can add food coloring to the dough, and flavored extracts, as well. I like to use natural food coloring or cocoa powder. No-Cook Gluten-Free Dairy-Free Sugar-Free Chocolate Mousse

Raw Chocolate Mousse

Imagine a no-cook sugar-free chocolate mousse that is also gluten-free, dairy-free, sugar-free, soy-free, corn-free, vegan and more! – that takes 5 minutes to whip up! Of course, you’ll need to soak one of the natural sweeteners, but that just takes about 4 hours. What is that sweetener? Dates! If you’re diabetic or low-carb, use a bit of stevia instead. Inspired by a few of my Facebook friends, I decided to create more gluten-free, sugar-free recipes. I’ve been meaning to grill some fruit but haven’t cleaned the grill yet. Unexpected guests? This is sure to please, as well as a great conversation topic! You can be sure I’ll be creating several versions of this recipe in the very near future. Perhaps with strawberries and bananas (not avocado and strawberries because that will turn to a brown color), other fruit and added nuts, like macadamia nuts or walnuts. With summertime here, it’s great not to bake! Enjoy and stay healthy!

If you are a chocolate and a nut lover like I am, you will appreciate this chocolate bark recipe because it is very heavy in the nuts, making it a more nutritious and high protein choice. The chocolate in this recipe can be adjusted to your liking. I used about 2/3 milk chocolate and 1/3 semi-sweet morsels. You can use Enjoy Life semi-sweet chocolate chips to make it gluten-free, dairy-free, peanut-free, soy free, egg free, casein-free, kosher pareve, vegan and artificial-ingredient-free. Today’s recipe is a Chocolate Cheesecake, layered with plain cheesecake and chocolate mint cheesecake, and then swirled with both on top. It looks gorgeous, yet is so easy to create this effect. Chewy Gluten Free Chocolate Cookies with Chocolate Chips

Chewy Gluten Free Double Chocolate Chip Cookies

I not only broke down and made chewy gluten free chocolate cookies but made them with chocolate chips to boot, for a double chocolate delight! I wanted to duplicate the cookie recipe used in the Pizookies at BJ’s Restaurant Brewhouse. They serve you a warm cookie freshly baked in a large tin topped with 2 scoops of rich chocolate ice cream. They even add a square of Ghirardelli Chocolate. These cookies are to die for! Fortunately, theirs are made with gluten, or I would be sharing one every time I visited there. Due to their calorie content, I would not eat these cookies often, but they are a definite treat for guests and special events. I am trying to cut dairy out of my diet a little bit at a time but miss my rich chocolate ice cream recipe. It’s one of my husband’s favorites, too. I have created several almond milk ice cream recipes, but today I incorporated the raw almond milk recipe into this dairy-free, gluten free, raw chocolate ice cream recipe and made it richer and creamier. It is high in protein compared to regular ice cream. You can make this recipe by using almonds or a lower protein version that is nut-free. I knew I had duplicated my dairy version perfectly once I saw the same consistency before it was frozen in the ice cream maker, just like homemade pudding before it sets in the refrigerator! Rich Chocolate Ice Cream for Machine (Regular or Dairy Free)

This chocolate ice cream recipe is just to die for! I double the recipe and make it in my 2 qt. Cuisinart Ice Cream Machine. It is the richest ice cream I have ever tasted! The original recipe I tried earlier had less non-fat milk and more half and half. That was way too rich!
