My quest to develop a gluten free ice cream sandwich took much more time than I expected. I first tried to adapt my own moist Gluten-Free Dairy-Free Chocolate Cake recipe. I just left out the leaveners. However, it turned out very gummy and too chewy. In my search to adapt a gluten ice cream sandwich recipe, all recipes fell short of my expectations by viewing their photos. I couldn’t even turn to Martha Stewart or Joy of Baking, two of my favorite cooking sites. Continue reading “Gluten Free Ice Cream Sandwiches”
Fried Gluten Free Mozzarella Sticks Recipe
My husband’s favorite junk food snack is onion rings. He’s never had fried cheese, though. So I just had to create a gluten free mozzarella sticks recipe. It’s crunchy and flavorful. If you want them to have a deeper color, use the chili powder. To make them yellow, add a bit of turmeric. You can spice them up or give them an Italian flare. They make great appetizers or snacks. To provide flavor, add a bit of grated parmesan cheese. If you use the shaker kind, be sure to use a gluten-free brand such as Kraft. They’re also awesome dipped in the batter and then rolled in bread crumbs. That provides more texture. I also have a Gluten Free Cheese Sticks Recipe using bread crumbs. This one uses more of an onion ring batter. I hope you enjoy them. Continue reading “Fried Gluten Free Mozzarella Sticks Recipe”
Gluten Free Chocolate Ice Cream Recipe (or Rocky Road)
Sunday, July 21 is National Ice Cream Day. I am mid perfecting a gluten free ice cream sandwich recipe and have been experimenting with a new gluten free chocolate ice cream recipe. I have made chocolate ice cream with a bit of xanthan gum, but this one turned out the best so far. Adding gum to homemade ice cream helps prevent crystals from forming and it provides a bit of chew. Using additional cream also helps prevent ice crystals and hard ice cream. There’s nothing worse than hard homemade ice cream. Enjoy! Gluten Free Donair Recipe – Meatloaf
This gluten free donair recipe was adapted from Harvard University’s Donair recipe. Donairs are similar to gyros but better. The history behind donairs is very interesting. When Peter and John Kamoulakos tried to introduce their Nova Scotia restaurant clientele to lamb gyros, it did not go over very well. They changed the lamb to beef and created a sweet sauce (some say using evaporated milk, sugar, vinegar and garlic powder). Today there are two restaurants in Ontario, Canada named Halifax Donair (Halifax is a municipality [large city] in Nova Scotia). You will find many Canadian pizza restaurants serving donairs and donair pizzas. This gluten free donair recipe is my version of this very messy, yet savory and sweet fare.
Meatloaf
This meat also makes a wonderful meatloaf, especially when made with ground turkey. Continue reading “Gluten Free Donair Recipe – Meatloaf”
Strawberry Mojito Cocktail (Naturally Gluten Free)

Gluten Free Apple Tart with Almond Custard and Crust
I recently developed a gluten free almond crust recipe for Answers.com (linked below) and of course I had to fill it with something delicious. I had several apples on hand and what better to compliment to almonds? This gluten free apple tart recipe has a strong almond flavor in its thick custard that surrounds that sauteed apples – just delicious! Enjoy. Easy Frittata Recipe: Sweet Potato and Zucchini (Naturally Gluten Free)
What makes this an easy frittata recipe is that you can use leftover to make it right on your stovetop. One night during the week, make sweet potatoes and boiled sliced carrots for dinner, making some extra for this dish. Then in a day or two, use your extra carrots and sweet potato for this dish. Stovetop cooking is perfect for summertime or any time of the year. Enjoy this Americanized version of an Italian favorite. Gluten Free Pizzelle Recipe
A gluten free pizzelle recipe sure to make your Italian grandma proud. They’re crisp, but not too crisp to mold into your favorite shapes. Serve these little gems flat topped with custard, whipped cream, or make ice cream tacos. Another option is to mold them around a cone-shaped mild to fill with ice cream or whipped cream. You can also shape them into cups and fill with your favorite custard, mousse, or ice cream. They also make a great substitute for gluten free cannoli shells. Southern-Style Gluten Free Biscuits and Gravy (with Dairy-Free and Vegan Options)
Every time I hit a milestone on how many Facebook followers I have, I ask my fans what gluten free recipe they would like me to create. Gluten free biscuits and gravy was one of the recipes requested. I asked the gentleman if you wanted white or brown gravy. He desired the white, southern-style gravy. I went one step further, and made a true southern gluten free biscuit and gravy recipe by adding sausage to the gravy. This is optional, or you can even use the vegan substitute I list below. I hope my southern readers, as well as others, appreciate this delicious recipe. Continue reading “Southern-Style Gluten Free Biscuits and Gravy (with Dairy-Free and Vegan Options)”
Gluten Free Peach Pie
After receiving several requests for a gluten free peach pie recipe, I developed this recipe. My favorite way to serve is cold after firming it up in the refrigerator for a few minutes. This prevents the juice from running out. But sometimes you just can’t wait! I did this! I actually enjoyed it both ways, but it makes for a nicer presentation once firm. I’m sure you’ll enjoy this recipe. I used my new flaky gluten free pie crust recipe. For those who do not use my gluten free all-purpose flour recipe blend, you’ll be happy to know that superfine rice flour is not needed for the crust. Enjoy!
