The only difference between a traditional and a gluten free caesar salad is the brands of ingredients you use. I have listed some of the easy to find ingredients that you will need. The one thing about caesar salad dressing recipes are that they are forgiving. So, if you do not consider yourself much of a cook, this is a recipe you surely can make successfully. I have left out the anchovies to make this kid-friendly. I hope you find this recipe useful, and tasty!
Traditionally, raw egg yolk is used in a casear salad dressing, however, the use of raw egg is now frowned upon due to salamina poisoning. Instead of raw egg, you may use the egg yolk from a hard boiled egg, or mayonnaise, as I did.
A delicious and easy gluten free caesar salad recipe made without anchovies. Top with cheese, tomatoes, bacon or all three!
Ingredients:
- 2 Tablespoons mayonnaise (or 1 egg yolk from hard boiled egg)
- 3/4 teaspoon garlic powder
- 1/4 teaspoon fine sea salt
- 2 - 3 teaspoons gluten free Dijon mustard (French's for sugar-free, or Grey Poupon), depending upon tastes (I used 3.)
- 1 Tablespoon red wine vinegar (or distilled white vineger)
- 1 Tablespoon lemon juice
- 3 Tablespoons extra virgin olive oil
- 1/2 teaspoon gluten free Worcestershire sauce
- 2 Tablespoons gluten free grated Parmesan (Kraft)
- 5 cups romaine lettuce leaves, torn
- 1 cup Gluten Free Croutons (see link for recipe)
- Pepper, to taste
- Cooked chicken breasts, cubed (optional)
Instructions:
- To a small food processor or blender, add mayonnaise, mustard and top with garlic powder and salt; blend well.
- Add vinegar, lemon juice, oil, Worcestershire sauce, and Parmesan cheese, one at the time, and mix before adding the next ingredient. Chill in the refrigerate for a couple of hours or overnight. Though not ideal when using powdered garlic, you may serve it immediately.
- Add half of the dressing to a large salad bowl; add croutons and lettuce; toss well; add additional dressing, to taste. I start with 3 tablespoons, and additional from there. Serve immediately. Though not traditional, you may add tomatoes or bacon pieces for color
Tips
If allergic to citrus substitute 1 Tablespoon distilled white vinegar + 1/8 teaspoon stevia powder (brands vary) for the lemon juice.
