Imagine gooey, stretchy cheese, creamy beans (red or black), and tortillas that actually taste like real tortillas. Then add some enchilada sauce, red or green. What is it? My gluten free enchilada casserole recipe! You can use store-bought tortillas. Rudi’s makes excellent gluten free tortillas. You can roll them and they don’t break. Gourmet Gluten Free Chili Recipe with Bacon
I hadn’t made chili with tomatoes for my husband in over a decade. Last weekend I was cleaning out our freezer and found a little tomato paste. So, I decided to use it in some chili for him. He enjoyed this recipe so much, I had to share it with it you. However, to be honest, he loves all of my gluten free chili recipes, which most are tomato-free. Gluten Free Tartiflette – Better Than Au Gratin Potatoes
Tartiflette is a French recipe made of potatoes, bacon and cream similar to au gratin potatoes, which originally did not contain cheese. Tartiflette contains lardon (cubed pork fat), but in the states, it may be easiest to use bacon. That’s why I use. Meanwhile, it is not a dish we can afford to consume on a regular basis, health-wise, but for special occasions or a treat, it is perfect, and so worth the effort. Gluten Free Oat Milk Recipe
While you can purchase oat milk in your local grocery store, the oats used in that milk is most likely not gluten free. Due to oats growing in fields adjacent to gluten crops and multiple other reasons, regular oats can contain up to 10% gluten. You can make your own gluten free oat milk at home. It’s easy and less expensive. I notice a quart of organic oat milk costs $3.49 at my local grocery store. You may not be able to find organic oats, but you can make a quart and half for a little over $1.00; and it won’t contain any gum. Mom’s Almost Famous Gluten Free Rice Pilaf
My mother used to make this recipe using Campbell’s Beef Consomme Soup. Well, the days of that much sodium are over for us. Plus, it’s not gluten free. I tried several times to duplicate the recipe without beef consomme (too lazy to make my own). I finally created a gluten free rice pilaf recipe with tons of flavor!
Update – I use Better Than Bouillon “reduced sodium organic” beef base/paste with water. I use more paste than suggested to make the broth so that it provides additional flavor. I use the reduced-sodium organic version. However, it may include cross-contamination nowadays. Always read labels carefully as manufacturers are constantly changing ingredients and sources for same.
Many celiacs do well with this brand of reduced sodium organic beef and chicken base. However, if you have any doubt, choose another brand or boil broth down until it is very strong and flavorful. Continue reading “Mom’s Almost Famous Gluten Free Rice Pilaf”
