Consumer Reports on Arsenic in Rice for Kids & Gluten Avoiders

Arsenic in White and Brown Rice

I received a question yesterday on arsenic in rice. To be honest, I didn’t want to dredge this all up again. However, Consumer Reports, the organization that published the first report on this subject, recently published an article on this very subject targeted at gluten free dieters and kids. If one person asked about this, I assume there are many others with concerns. Check out the question from that reader and my response.

Gluten Free Fixings for a Potato Bar + Perfect Baked Potato

The Perfect Baked Potato + Gluten Free Fixings for Baked Potato Bar

Here is an easy recipe for any event. Make a baked potato bar. You can have everyone make their own. All you have to do is supply the hot, baked potatoes. Rather than stabbing them and microwaving them, or just plopping washed potatoes in the oven, go one step further and make these. If you typically bake potatoes on 450°F, like I used to do, you’ll discover a new temperature that achieves better results. Enjoy! I know you and your guests will. Gluten Free Meatloaf in a Mug

Gluten Free Meatloaf in a Mug

I’ve been receiving more and more request for meals in a mug recipes, as well as individual portion-sized recipes. This gluten free meatloaf in a mug can be made in about five minutes, two of which is for cooking. Surprisingly, the flavor is one of the best-tasting meatloaves I’ve had. It is a spinoff of my Sweet & Savory Gluten Free Meatloaf Recipe for the oven, without the sweetness. It’s heavy on the meat, making it a protein-packed meal. It looks like one big meat ball! Layered Gluten Free Chocolate Mousse Cake

Gluten Free Chocolate Mousse Layered Cake

Straying away from the typical all-chocolate mousse cake, I created this layered gluten free chocolate mousse cake instead. I don’t know about you, but I like to have cake in my cake. If I wanted all mousse, I would simply make chocolate mousse. I don’t enjoy the typical triple chocolate mousse cake because it contains white chocolate, of which I am not a fan. It’s too sweet for my tastes buds. This recipe combines the best of both worlds, chocolate cake and chocolate mousse. That’s all I can say is, “Mmmmm!”  Continue reading “Layered Gluten Free Chocolate Mousse Cake”

The best part? – the ice cream surprise, right in the middle! Enjoy. Continue reading “Gluten Free Baked Alaska: Individual Size”

Coconut Milk Ice Cream Recipe

Naturally Gluten Free Coconut Ice Cream

Perhaps you are vegan, vegetarian, dairy free, or just wish to avoid processed ingredients. If so, you have to try this healthier version of ice cream. This is a rich coconut ice cream recipe that is naturally gluten-free. Rather than using heavy whipping cream or half & half, this recipe calls for all full-fat gluten free coconut milk. Coconut milk makes the perfect substitute for cream and eggs in ice cream recipes. If you can tolerate eggs, you can reduce the coconut milk by a 1/2 cup for every 3 eggs added. When you roll ice cream into balls and then coconut flakes, they look like snowballs. Enjoy! Continue reading “Coconut Milk Ice Cream Recipe”

Gluten Free Hush Puppies

Gluten Free Hush Puppies with Chipotle Honey Dipping Sauce

Do you enjoy cornbread? Do you enjoy donuts? If you answered yes to both of these questions, you’ll enjoy these gluten free hush puppies, even more. These babies are delicious served with just about anything. However, try pairing them with seafood or something spicy for a southern flare. They are moist and make a wonderful snack, as well. Though they contain plenty of onion, the onion is sauteed first to sweeten them up. This avoids the use of tons of sugar. Ahhhh…just amazing! Continue reading “Gluten Free Hush Puppies”

Gluten Free Chocolate Cream Cheese Icing

Gluten Free Chocolate Cream Cheese Icing

I thought for a change, rather than traditional cream cheese icing, you may desire a different choice. You can never go wrong with more chocolate. This icing is not super sweet. So, feel free to add additional confectioners’ sugar, if you choose. Enjoy!
