French Seedy Gluten Free Graham Cracker Recipe

Image: French Gluten Free Cereal Crackers

Crackers aux Céréales is French for cereal crackers. I made this version of my gluten free graham cracker recipe when I recently stumbled up their existence. Europeans know food, and they have quite a few ideas that only seem to catch on in America if a well-known chef decides to duplicate one of their recipes here in the United States. These seedy crackers are served in France with breakfast. You may top them with the same condiments you use to top your toast. Use jam, nut butter, peanut butter, and even the famous nut cocoa spread, Nutella, which is extremely popular in Europe. It is made of hazelnuts and cocoa. Another option is to dunk them in coffee, tea, or milk. My version of these gluten free cereal crackers tastes like a gluten graham cracker with seeds on top. I hope you enjoy this recipe. There’s nothing like a little nutty flavor on breakfast food. Continue reading “French Seedy Gluten Free Graham Cracker Recipe”

Classic Gluten Free Waffle Recipe

Image: Gluten Free Waffles

You may be wondering the difference between a waffle and a pancake batter. A gluten free waffle recipe often calls for whole eggs. In this recipe, I have made them the traditional way, separating the egg yolks and whites. The whites are whipped until stiff and then folded into the batter at the end. This lends an airier texture to waffles versus an almost cake-like pancake texture. The other difference between waffles and pancakes is the fat content. Waffles contain more fat (oil or butter) which makes them crisper. Continue reading “Classic Gluten Free Waffle Recipe”

Pumpkin Yeast-Risen Gluten Free Donuts (Picarones)

Image: Raised Gluten Free Donuts - Pumpkin

I have been wanting to make some yeast raised gluten free donuts, but was so excited when I discovered picarones. They are also risen donuts, but made with a sweet squash (pumpkin in this case) and sweet potatoes. They are also known as Peruvian donuts as they are popular in Peru. You can make these gluten free donuts using fresh or canned pumpkin. Just note that fresh pumpkin tends to vary in moisture and may not turn out the same. Meanwhile, enjoy these delightful treasures. Picarones leave a lasting impression to tourists who visit Peru. Thin Soft Gluten Free Wraps

Image: Soft Gluten Free Wraps

These gluten free wraps are soft and pliable, and that’s not all. They are packed with protein. They fall somewhere between a tortilla and a crepe. Don’t allow the fava bean flour to scare you off, if you have tried other bean flours and they were bitter. Fava bean is very mild and not bitter at all. Combining beans with eggs boosts the nutrient values in the beans as eggs are a complete protein (contains all essential amino acids). This recipe is gum-free and grain-free. You finally have a thin, soft gluten free wraps that is pliable enough to roll and slice your favorite appetizers. Enjoy! Continue reading “Thin Soft Gluten Free Wraps”

This gluten free blueberry coffee cake may be made three different ways. You can use canned blueberry pie filling and layer it as seen in the photo below and add an optional glaze. You can use fresh or frozen blueberries and fold them into the batter. Lastly, once you fold the blueberries into the batter you can top it with the streusel topping recipe I have supplied below. I chose the quickest method, pie filling, and it was delicious. Enjoy this blueberry coffee cake, no matter how you assemble it. I have included instructions on how to bake it in a 9-inch round pan, 9 x 9-inch square pan, or see the tips section for making a larger one in a 9 x 13-inch pan. Crepes are a thin, moist pancake, and usually richer due to added butter. However, this gluten free crepes recipe may be made with healthier by using margarine, dairy free spread, and dairy free milk, if desired. For darker crepes, use Dutch processed cocoa (Rodelle brand is gluten free). It is not acidic like pure cocoa powder. Meanwhile, enjoy these gluten free chocolate crepes.
