Gluten Free Pumpkin Biscotti (or Sweet Potato) (Dairy Free)
My grandmother and mother used to make biscotti (Italian cookies), but I never enjoyed them until I made my own, gluten free, of course! These gluten free pumpkin biscotti may be filled with dried fruit and/or nuts, or not. Did I hear, “Amazing”? Why, yes, I did! Use pumpkin puree or pureed sweet potatoes. Either way, they’re delicious! Nuts and dried fruit are optional. You can even dip them in melted chocolate.

Tartiflette (pronounced tar tee fi let, with a short ‘i” in “fi”), is a French au gratin potato recipe classically made using Reblochon cheese, bacon, onion, and white wine. Served during Christmas and on St. Joseph’s Day, these Italian fig cookies (Sicilian treasures) were made by my grandmother, aunt, and now two generations of cousins. I was recently sent a catalog from Popcornopolis. They’re offering a seasonal caramel corn that is red velvet inspired. A 2-gallon container goes for $49.99. I thought it would be a nice idea to develop a similar recipe, not knowing what ingredients they use. OMG! Now I know why it goes for that price! Plain, it’s such a delicious snack! However, when topped with the creamy topping that I created, this red velvet popcorn is just incredible!
