I’ve been receiving more and more request for meals in a mug recipes, as well as individual portion-sized recipes. This gluten free meatloaf in a mug can be made in about five minutes, two of which is for cooking. Surprisingly, the flavor is one of the best-tasting meatloaves I’ve had. Naturally Gluten Free Coconut Ice Cream

Perhaps you are vegan, vegetarian, dairy free, or just wish to avoid processed ingredients. If so, you have to try this healthier version of ice cream. This is a rich coconut ice cream recipe that is naturally gluten-free. Rather than using heavy whipping cream or half & half, this recipe calls for all full-fat gluten free coconut milk. Coconut milk makes the perfect substitute for cream and eggs in ice cream recipes. If you can tolerate eggs, you can reduce the coconut milk by a 1/2 cup for every 3 eggs added. Nature’s Path sent me a couple of boxes of their new Qi’a Hot Oatmeal in Creamy Coconut flavor. I don’t usually enjoy coconut in my oatmeal; therefore, I had to find another use for it. I love coconut in granola and used it for that. I also usually use plenty of superfoods in my granola. This was so easy to make because Qi’a Hot Oatmeal already contains many of them. Gluten Free Protein Shakes with Superfood

The other day, I needed a fast, healthy, light lunch. I waited too long to eat lunch and didn’t want to ruin my dinner. My first thought was protein shakes, but I didn’t have my go to fruit, banana. Being out of them, I reached for some frozen blueberries instead. But how was I going to get full on those? Well, I found a fulfilling source of protein, oatmeal. Oats are the highest protein gluten free grain. I used a packet of Nature’s Path new Qi’a Hot Oatmeal in the Creamy Coconut flavor. The coconut flavor was overpowered by the blueberries, but it still tasted wonderful and was the perfect low-cal, healthy choice. The added grains, seeds and fiber makes it more flavorful and healthier. Plus I love anything that has a bunch of ingredients in one package. Chewy Gluten Free Vegan Oatmeal Raisin Cookies with Superfoods

Gluten Free Vegan Oatmeal Cookies

Nature’s Path just came out with three flavors of their new Qi’a™ Superfoods Hot Oatmeal. Flavors include Creamy Coconut, Superseeds & Grains and Cinnamon Pumpkin Seed. I love the Superseeds & Grains because it has a bit of crunch. It contains rolled oats instead of quick-cooking oats like so many brands. They asked me to create a recipe using my favorite flavor for their Pinterest Oatmeal Month (January) contest and here it is, a gluten free vegan oatmeal raisin cookies. They are so good that when I made them (just before dinner), I ate three and couldn’t eat my dinner. It was one of those nights…eat dessert for dinner and a small dinner for dessert. Mind you, I am not on a dairy-free or vegan diet, yet they still met my requirements for a chewy cookie. Enjoy!

Gluten Free Bananas Foster

Gluten Free Bananas Foster with Homemade Banana Liqueur

If you wish to impress your guests, flambe a dessert. Bananas Foster may be served flambe-style, though it is not necessary. If you’ve never had Bananas Foster, now is your chance. It is extremely delicious and easy to make. The caramel sauce is simply made with butter, brown sugar, and a couple of alcohols. Traditionally served over vanilla ice cream, enjoy this gluten free bananas foster over bread pudding, waffles, French toast, in crepes, and my favorite, wait for it…over cheesecake. You can also serve the caramelized bananas alone with just the sauce. To die for! If you do not light the alcohol or cook it off, you’ll feel as if you had a cocktail or two! – Just warning you.
