Gluten Free Bear Claw (Almond) Coffee Cake

Gluten Free Bear Claw Coffee Cake

A bear claw is a yeast-raised Danish pastry, often shaped like a bear’s claw, filled with a delicious almond filling. This moist coffee cake is layered with that same filling. The filling layer is added prior to baking, saving you time. All test-bakers rated this cake 10 out of 10 in flavor, texture, and moistness. Gluten-Free Allergen-Free Devil’s Food Cake

Gluten Dairy and Egg-Free Devil's Food Cake Recipe

While developing recipes for my cookbook, I created a traditional Copycat Betty Crocker Devil’s Food Cake Mix recipe. At the time, I wasn’t sure on the theme of my cookbook. I thought I’d give an egg-free version a try. My husband who loves devil’s food cake enjoyed it as did I. The one recipe tester who tried it did not use a mixer, which would have made it lighter. She just mixed it all up in a bowl. As you can see in her photo, it still looks delicious, but a little dense. She really enjoyed it, even though she is not on an egg-free diet. She rated it 10/10 in texture, 9/10 in flavor, and 10/10 in appearance. Her husband thought it was too moist. Meanwhile, I hope you enjoy it as much as we did.

Gluten Free Meatloaf in a Mug

Gluten Free Meatloaf in a Mug

I’ve been receiving more and more request for meals in a mug recipes, as well as individual portion-sized recipes. This gluten free meatloaf in a mug can be made in about five minutes, two of which is for cooking. Surprisingly, the flavor is one of the best-tasting meatloaves I’ve had. It is a spinoff of my Sweet & Savory Gluten Free Meatloaf Recipe for the oven, without the sweetness. It’s heavy on the meat, making it a protein-packed meal. It looks like one big meat ball! This is a wonderful size cake to make when you’re only having one or two guests over or have a small family. I like to make small cakes so that I am not tempted to continually eat sweets. The combination of the coffee almond frosting and chocolate cake creates a mocha sensation to rock your world. This gluten free chocolate cake is decadently moist and chocolaty. Apricot Cherry Gluten Free Streusel Coffee Cake Recipe (or Tart)

Gluten Free Cherry Apricot Coffee Cake

Last month, I used my butter cake recipe to make this beautiful gluten free streusel coffee cake recipe. I just added fresh fruit and streusel topping. Instead of using my usual Gluten Free All Purpose Flour Blend Recipe in the topping, I used my Self-Rising Cake Flour Blend Recipe. It created a higher rise and lighter topping. If you prefer, you can use the same flour as you do in the cake. In addition, you can create a tart instead of a cake, omit the streusel and dust it with confectioners’ sugar (see the photo below the recipe.) Enjoy!
