Sunday, July 21 is National Ice Cream Day. I am mid perfecting a gluten free ice cream sandwich recipe and have been experimenting with a new gluten free chocolate ice cream recipe. I have made chocolate ice cream with a bit of xanthan gum, but this one turned out the best so far. Adding gum to homemade ice cream helps prevent crystals from forming and it provides a bit of chew. Using additional cream also helps prevent ice crystals and hard ice cream. There’s nothing worse than hard homemade ice cream. Enjoy! Gluten Free Strawberry Ice Cream Recipe

This strawberry ice cream recipe is gluten free. Most ice cream recipes are except for the ones with addins that contain gluten. Made with old fashioned custard base, this recipe is creamy, but doesn’t freeze up as solid as many homemade ice cream recipes because of the added gum. It helps prevent crystals from forming and provides a bit of chew, just like commercial brands. You can add more xanthan gum, if desired. Chocolate Gluten Free Caramel Sauce

The consistency of this gluten free caramel sauce is much like the hot fudge for ice cream you can purchase in jars. However you may heat it and thin it out with additional milk, if desired. It calls for my gluten free dulce de leche recipe (thick, rich caramel sauce), but you can also purchase dolce de leche already made. Hershey’s makes one that is gluten free. Once you have your dolce de leche made or purchased, this chocolate caramel sauce may be made, literally, in one minute. Someone once said that the only thing they would trade chocolate for is dolce de leche. Well, I wish they could taste this. It’s heaven on a spoon! Of course, this watermelon recipe can be made in a bowl or atop a with gluten-free ice cream cones or regular. If using a cone you can decorate the cone’s top edge with frosting or whipped cream. I’m fresh out of my Goldbaum’s gluten-free ice cream cones. I gave them all to my grandkids. However you can have more ice cream in a bowl, which is what I enjoy the most! This not only makes a great 4th of July recipe, but a nice cool treat all summer long. I had so much fun making this! I’ve never scooped such a large watermelon ball before, but it was very easy. Gluten Free Chocolate Mochi Ice Cream

Mochi is a naturally gluten-free Japanese dessert, served during Japanese New Year and year round, usually in the form of a very starch rice cake. However, that same starchy rice dough is used to wrap frozen balls of ice cream. Mochi ice cream is a unique dessert that everyone should, at least, try once! Kids would love to make them! The little ones can help. You can add food coloring to the dough, and flavored extracts, as well. I like to use natural food coloring or cocoa powder. Strawberry Gluten Free Frozen Yogurt

Homemade Gluten Free Frozen Yogurt

While most frozen yogurt recipes are made with plain yogurt, I used Greek yogurt, as it is more easily digested than regular yogurt and contains good live bacteria, if you purchase the good kind. I use FAGE Greek yogurt. In addition, instead of using cow’s milk (non-fat is traditionally used), coconut milk or gluten free rice milk may be substituted. I used homemade raw almond milk. You can use any yogurt or milk you desire to fit your dietary needs. This frozen yogurt is sweetened with agave syrup which reacts slower on your glycemic (blood sugar) levels instead of all at once like table sugar. However, if you desire to use table sugar or evaporated cane sugar, you may add it all in the pan when cooking the strawberries. Gluten Free Strawberry Sorbet

Strawberry Sorbet (Naturally Gluten Free)

It’s strawberry season again and I am delighted! Sorbet is gluten free, naturally, but not always egg-free. This strawberry sorbet recipe includes several choices of ingredients. Due to my citrus allergies I used cream of tartar in place of lemon juice, but if I could have use lemon juice, and suggest you do for a more flavorful sorbet. Pineapple juice or orange juice will also work well. As a thickening agent you can either use a food starch or egg white, whichever works best for your diet. If you are watching your sugar intake or prefer a refined sugar-free version you may use agave nectar/syrup in place of simple syrup (sugar and water heated). Adding a natural food coloring will make it look more appetizing, but it is not necessary. Select Tea makes natural ones. If you do use food coloring, you are not limited to red. Rich Gluten Free Banana Ice Cream

Banana nut ice cream is one of my top 5 favorite ice creams! I created this recipe for my holiday guests and they all enjoyed it very much. My sister, who professes she will not touch a banana, even enjoyed it! I made this banana ice cream in my ice cream maker, but almost ice creams can be made just by freezing it in an airtight container. I hope you enjoy this recipe as much as we have. Raw Banana Ice Cream

There is a YouTube video on how to make raw banana ice cream with a juicer. You just remove the skin from bananas; freeze the bananas, whole; remove the filter or screen from your juicer; feed them through and voila! – You have soft serve banana ice cream.  However, what does one do if they do not have a juicer? You can even make ice cream without an ice cream maker and both without a juicer. This recipe is gluten-free, vegan, raw, refined sugar-free and sugar-free, as it is naturally sweetened. Enjoy this healthy treat!
