Gluten Free Pizookie

BJ’s Restaurant Brewhouse makes an incredibly popular dessert called Pizookie, (pizza cookie). See my gluten free pizookie recipe below.) It is a warm, gooey, fresh-baked cookie served in a baking tin, topped with a double scoop of ice cream. You have a choice of several different cookies topped with your choice of ice cream. Most people either have to save room for this decadent dessert or many share it with others because it is such a large portion. Many people go to BJ’s because of this dessert! That’s how good it is!  Be careful, though! It’s so good you may not notice you’ve eaten too much until it’s too late!

UPDATE – August 9, 2011: BJ’s now serves a chocolate chip gluten-free pizookie! Hurray!

I am trying to cut dairy out of my diet a little bit at a time but miss my rich chocolate ice cream recipe. It’s one of my husband’s favorites, too. I have created several almond milk ice cream recipes, but today I incorporated the raw almond milk recipe into this dairy-free, gluten free, raw chocolate ice cream recipe and made it richer and creamier. It is high in protein compared to regular ice cream. You can make this recipe by using almonds or a lower protein version that is nut-free. I knew I had duplicated my dairy version perfectly once I saw the same consistency before it was frozen in the ice cream maker, just like homemade pudding before it sets in the refrigerator! Rich Chocolate Ice Cream for Machine (Regular or Dairy Free)

This chocolate ice cream recipe is just to die for! I double the recipe and make it in my 2 qt. Cuisinart Ice Cream Machine. It is the richest ice cream I have ever tasted! The original recipe I tried earlier had less non-fat milk and more half and half. That was way too rich! This recipe is dairy free, refined sugar-free and additive-free. I love pistachio ice cream but have had trouble thinking of a way to make it green without using artificial food coloring. I recently learned that avocados may be used as a substitute for eggs. Do you see where this is going? A raw avocado ice cream recipe made with almond milk, but instead of using vanilla extract, as some may have thought, I used almond extract. Just delicious! It also contains agave syrup. Traditional strawberry shortcake recipes are made with layers of angel food cake with a layer of whipped cream or strawberries and topped with one of the same. I used a plain gluten-free cookie recipe to line a ramekin; baked it; and tossed it in the freezer for a couple of hours. Once frozen I made some homemade vanilla ice cream; added a layer of it on top of the cookie; then a layer of strawberries in syrup; then another layer of ice cream; topped it all with sweetened gluten-free whipped cream and slices of frozen strawberries; and froze. Gluten Free Watermelon Smoothie

The other day I was watching the Paula Deen show and she made water melon coolers. I happened to have had a huge watermelon that I had planned on using when I had company, but didn’t. Making a watermelon smoothie was a perfect way to consume the watermelon fast and watermelon is a great diuretic. I am allergic to citrus so I skipped the lemon juice, but wish I could have used it. But even without the lemon juice, these are

great! And if you choose to add Greek yogurt, it will assist those with candida, though they should avoiding sugary drink. Paula used watermelon, lemon juice and a big scoop of lemon sorbet. Lemon juice is also a great diuretic. I don’t recall her portion sizes on ingredients, but you can’t go wrong with this smoothie recipe, as it is very forgiving. I used Greek yogurt and pineapple juice, but you can use just about anything creamy with any juice you wish. Suggestions for creaminess are: vanilla ice cream, flavored yogurt, whipping cream, etc. All you need is a blender. Enjoy this refreshing watermelon smoothie! I really wanted to make a walnut paste with roasted garlic, therefore, I began a new experiment.
