Gluten Free Cherry Apricot Coffee Cake

Last month, I used my butter cake recipe to make this beautiful gluten free streusel coffee cake recipe. I just added fresh fruit and streusel topping. Instead of using my usual Gluten Free All Purpose Flour Blend Recipe in the topping, I used my Self-Rising Cake Flour Blend Recipe. It created a higher rise and lighter topping. If you prefer, you can use the same flour as you do in the cake. In addition, you can create a tart instead of a cake, omit the streusel and dust it with confectioners’ sugar (see the photo below the recipe.) Enjoy! Gluten Free Coffee Semifreddo

Ice cream makers are perfect for making semifreddos, a semi-frozen dessert. Coffee semifreddo is a dessert I enjoy serving dinner guests for a little pick-me-up/caffeine boost, thought it is lightly flavored. You can make the pudding in advance and keep refrigerated. Then about 20 minutes prior to serving, freeze it up in your ice cream maker and fold in the whipped cream. Those who do not make homemade desserts are usually fascinated with the process and thoroughly enjoy this light treat. You can vary the recipe by adding various mix-ins. For oreo lovers, this gluten free oreo cheesecake will surely please them all. It’s rich, sweet, and oh so delicious. Have your gluten-eating friends and family rave about this dessert. Make the oreo cookie recipe provided in the link below, or purchase Pamela’s gluten free extremely chocolate mini bites/wafers and fill them with the filling in the oreo cookie recipe. Carob, Chocolate or Chocolate Chip Gluten Free Oat Crepes

Gluten Free Oat Crepes with Chocolate or Chocolate Chips

These crepes are simply amazing! I enjoyed making these gluten free oat crepes by halving the recipe and adding finely chopped carob chips (you can use any gluten free chocolate or chips) to part of the batter. To the other portion of the batter I added 3/8 to 1/2 cup of homemade ganache. Then I used the remaining ganache to spread on some of the crepes, along with peanut butter and sliced strawberries. To die for! What makes these crepes a healthy choice is that they are made without the use of high-carb white starch or gums. All you need is gluten free oat flour or ground oats. Enjoy.

A picture tells a thousand words and this gluten free crumble photo is no different. Make this dessert in individual portions or into a tart using a sturdy Gluten Free Shortbread Crust. You know the saying, “death by chocolate”? There are a few brands of ice cream named “death by chocolate” as well. Currently, I am avoiding chocolate and had a craving for some. It had been over two months since I had any. So, I finally got around to ordering some carob powder and created a new carob ice cream recipe. I started with my Rich Chocolate Ice Cream Recipe (which should be named, “death by chocolate”). Then I made it a little richer to make up for the lack of chocolate. I love it and so does my chocolate loving husband! If chocolate keeps you awake at night, note that you can eat this any time because carob does not contain caffeine. Gluten Free Rocky Road Ice Cream Sandwiches

Homemade Gluten Free Ice Cream Sandwiches

While this recipe is not new, I added some topping options, or shall I say sidings, as they go onto the sides of these delicious gluten free ice cream sandwiches. I did not use any marshmallows, which is typical of rocky road, but you can add them to the ice cream, if desired. Just be sure to use gluten free marshmallows such as Jeff Puff. I usually find the large Jeff Puff marshmallows at my local store and then cut them into smaller pieces when necessary.
