In earlier years I was never a fan of buttercream frosting. However with age we our taste buds change. Actually, I believe we lose some. Since I have experimented with different flavors of frosting, I have come to appreciate them. This mocha frosting is one of my new favorites, especially on a rich chocolate cake. You can easily adjust the recipe to make coffee frosting with the tips provided. The key to a good buttercream frosting is how long you beat it. You want it to be airy and light, similar to mousse. Lemon Panna Cotta (Egg-Free Custard) with Bourbon Sauce (Gluten-Free)

Lemon panna cotta is an Italian, egg-free custard. Panna cotta can be made in several different flavors with an array of sauces. It is often served with biscotti, an Italian biscuit-cookie. You will find this particular recipe to include your choice of plain bourbon sauce or walnut bourbon sauce. I’ve included the recipe for the garnish, candied lemon peel, as well. I thoroughly enjoyed creating this gluten free white cake recipe as it is so easy to handle when inverting. It is due its many egg whites, which also makes it moist, along with its butter and sugar. You can use your favorite fillings and frosting from fruit purees to sweetened whipped cream and chocolate ganache to fluffy white frosting, or chunks of fruit within the whipped cream. Gluten Free Snickerdoodles

Fresh out of the oven or cooled, these gluten free snickerdoodles are to die for! Just like traditional snickerdoodles, they are a light, soft, sugary cookie with a crisp, chewy outer shell. The inside is not quite cake-like, but definitely not dense like regular cookies. They are chewier than cake. I surveyed my Facebook followers on how they enjoy their snickerdoodles. Gluten Free Oreos Style Cookie

Where do I begin? This gluten free oreos style cookies recipe was definitely a challenge to develop. However, it was absolutely worth the time! Through trial and error of different amounts of ingredients, omitting ingredients, trying several baking times and temperatures, and different styles of chilling the dough, it resulted in great cookie. In the tips section below I provide different baking times and different dough thicknesses so that you may bake them to your preference. I hope you, your friends, and family enjoy these, as much as my husband and I have enjoyed testing all of the different varieties. It’s great to know you that you we can have gluten free oreos, and without any artificial ingredients!

Gluten Free Zabaglione with Raspberries and Biscotti

Known by different names in different parts of the world, this custard sauce is called zabaglione in Italian. It is a thin custard flavored with a bit of sweet wine, usually Marsala, and is typically served atop fruit. You may, however, serve this sauce over a pastry or any dessert dish you desire. It is traditionally served with biscotti, an Italian cookie. Being half Italian, I had never tried zabaglione, less than gluten free zabaglione. I hope you enjoy it as much as I did. Gluten Free Honey Graham Blondies (Egg-Free with Dairy-Free Options)

For the bottom layer of these gluten free blondies, or dessert bars, if you wish, I used my gluten free graham cracker recipe. I added a bit more honey and butter to soften the crust. You may add sweetened condensed milk, or for dairy-free, coconut milk and honey. After that you top it with your favorite toppings: chocolate chips, nuts, oatmeal, and/or shredded coconut. I skipped the coconut due to allergies. Of course, if you’re dairy-free you’ll use your favorite brand of dairy-free chocolate chips. I’ve listed the most popular, easy to melt brand below. Floating Island – Poached French Meringue with Custard (Naturally Gluten Free)

A floating island is a French dessert consisting of thin vanilla custard with a poached ball of meringue balls, dumplings if you wish, floating on top. Top them with your choice of several sauces below. I chose a bit of cherry sauce from a can of gluten free cherry pie filling in addition to chocolate sauce. Because a floating island is filled with egg protein, it definitely makes for a healthier dessert compared to starch-filled alternatives. I hope you enjoy this recipe.
