Chia Coconut Pudding (Dairy-Free Sugar-Free)

Dairy-Free Chia Coconut Pudding

If you’re looking for a healthy gluten free dairy free snack, try chia coconut pudding. You can make the pudding sugar free if desired. Use your favorite sweetener. If you’re not dairy-free, you can even layer it with some Greek yogurt. However, dairy-free yogurt is also a good treat. Making chia coconut pudding takes less than five minutes. It’s that easy! Gluten Free Tiramisu Parfaits

Delicious Gluten Free Tiramisu Parfait

One of my favorite recipes is tiramisu. These gluten free tiramisu parfaits combines some of my favorite fillings: vanilla pudding, cream cheese, and whipped cream with one of my favorite cakes, sponge cake. (The sponge cake is the same recipe I use in my Gluten Free Tiramisu Cake Recipe.) The espresso, or strong coffee, along with chocolate create traditional tirmasu flavor. It’s easier to serve when having guests and is impressive. Tiramsu is often everyone’s favorite. May they all enjoy! Continue reading “Gluten Free Tiramisu Parfaits”

Chocolate Cherry Gluten Free Trifle Recipe

Image: Gluten Free Trifle with Cherries and Chocolate Brownies

This head-turning, gluten free trifle recipe is both colorful and delicious. The cherry glaze shimmers over the fresh cherries and while the colorful, contrasting colors catch your eye. Instead of using gluten-free sponge cake, I used chocolate brownies. With layers of sweetened whipped cream, the flavors balance perfectly. Use fresh cherries when they are in season, or defrost frozen cherries when not. Another option is to substitute the cherries for another fruit with matching flavored jam. You can easily turn this into a strawberry gluten free trifle recipe. Fourth of July Jello Dessert (Gluten Free)

Image: Gluten Free 4th of July Dessert

Jello is gluten free and enables you to make a very festive gluten free fourth of July jello dessert recipe. While I do not usually post any gelatin desserts, these are so adorable, I couldn’t resist. I just loved the red, white, and blue colors. You can create all sorts of fun things with this recipe: use different fruit, add fruit to the jello, tilt the glass while it’s chilling to create angled jello layers, and add vodka. I hope you all have a fun and safe 4th of July! Continue reading “Fourth of July Jello Dessert (Gluten Free)”

Chocolate Chantilly – Rich Egg-Free Chocolate Mousse

Image: Chocolate Chantilly

The definitions of chantilly is 1. (of cream) flavored whipped cream, usually flavored with vanilla, but it can also be rum or liqueur; and 2. (of food) food prepared or served with whipped cream such as peach chantilly: peaches served with whipped cream which is usually flavored. Chocolate chantilly is a very strong flavored whipped chocolate which contains about 75% cocoa. Because the chocolate is so intense I decided to set some of it aside whip some heavy cream and powdered sugar into it. This enabled me to create a nice layer affect. It creates a beautiful presentation, and once you add whipped cream to the top, it all balances out nicely. With the hot weather we’ve been having, a nice cool dessert that doesn’t have to be baked or cooked long is just perfect. Enjoy! This gluten free parfait is perfect for the holidays with its golden caramel color. Use your favorite gluten free brownie recipe or the one linked below. Because so many premade caramel sauces contain gluten, making the Dolche Leche (rich caramel sauce) is the perfect way to go for those on a gluten free diet. The baked apple slices compliment the ingredients perfectly, in color and flavor. The best part about this dessert is that most of the ingredients may be made in advanced. Enjoy, and happy holidays to all! Continue reading “Gluten Free Parfait: Brownie Caramel Apple”

Sugar-Free Gluten Free Chocolate Parfait

Image: Gluten Free Chocolate Parfait

I’ve had several requests for gluten free, Jello instant pudding recipes as well as sugar-free ones. I do not advocate the use of sugar-free jello instant pudding, as it contains aspartame, which is a known cancer causing sweetener. To make this parfait with Chocolate Sugar-Free Fat-Free Jello Instant Pudding it will contain 8 grams of carbs per 1/2 cup. My suggestion is to make my No-Cook Gluten-Free Dairy-Free Sugar-Free Chocolate Mousse, which is pudding-like, and it uses avocado, a healthy fat, and is sweetened with dates. It also does not contain any chemicals or artificial dyes like the package pudding. Nor does it taste bitter. If you’d like to make the no-cook pudding with lower glycemic levels try substituting the dates with a little agave nectar/syrup. Either way, the natural way may be more work, but it’s delicious and a healthier choice. Enjoy! Continue reading “Sugar-Free Gluten Free Chocolate Parfait”
