Flaky Gluten Free Croissants

I put off developing a recipe for gluten free croissants for way too long. After multiple requests, here it is! I used my new gluten free phyllo dough recipe. Though it calls for superfine rice flour, I will be experimenting in the future with non superfine gluten free flours. I baked them after my husband went to bed one night and left 5 out, loosely covered. with a note stating to have as many as he’d like. I made them with tapioca flour/starch, which I am allergic to. (I had a couple anyways. Oh my!) When I woke up the next morning they were all gone. That night be kept raving them about them. I have never heard him enjoy anything, gluten free, more than these. Since my fluffy gluten free cinnamon rolls recipe was such a big hit I thought I would swap the filling for something a bit more elegant. Chocolate ganache suited perfectly. The creamy texture of the ganache adds an additional texture to this dessert which is an important component in the culinary field. Gluten Free Pie Crust – Perfect for Double Crust

This gluten free pie crust is awesome to work with! I developed it for KitchenAid’s new 13-Cup Food Processor with ExactSlice System. It’s the perfect gluten free crust! If you’d desire, you can even weave a top lattice crust using this dough. It is a lighter crust than typical pie crusts, similar to a pâte brisée, which is a half fat (butter and/or shortening) and half flour ratio. However, in this recipe, I used quite a bit more flour. I just wanted to lighten up a regular crust a bit. It turned out an amazing gluten free pie crust, as it was not dry at all, but moist, flavorful and flaky. Gluten Free Apple Strudel

Again, I am honored to be able to create a gluten free recipe for KitchenAid. Today I present an amazing gluten free apple strudel, made with the new KitchenAid 13-Cup Food Processor with ExactSlice System. The strudel is absolutely amazing, as is the food processor! It’s right up there with my KitchenAid Stand Mixer. It has the ability to slice in 6 different thicknesses; works at 2 speeds; has 3 different sized openings to feed food items; comes with an adjustable slicing blade, as well as a shredder and dough blade (for yeast dough); is accompanied by several attachments, all in its own little carrying case/box. The best part…it has a separate chef bowl, with its own sized blade, which enables you to mix or prepare one food, while keeping the main bowl clean for your next food item. Heaven! When KitchenAid made this product, they read my mind! – and yours too, I bet.

Gluten Free Churros

These gluten free churros are perfection! They have a crisp outer crust with a creamy center. You couldn’t ask for more. A dairy-free option is provided.

This gluten free churros recipe was adapted from the gluten Churros Recipe on All Recipes. Though their recipe did not call for egg, churros are usually made from a choux, French for a dough made with egg such as cream puff pastries. It is the ideal dough to use, as it creates that well known, creamy, marshmallow-like texture in the center. I have only tasted churros once and did not like them at all. Once I did some research and found out about the marshmallow center and the choux, I knew I’d love them. These babies are better than donuts! Enjoy this Spanish favorite!
