This gluten free sopapillas recipe turned out amazing! They are crunchy on the outside and a bit chewy on the inside. I enjoy them more than the gluten sopapillas. The secret? Buttermilk! Using buttermilk creates crispy pillows of goodness.. (I got this idea from Gluten Free Indian Fry Bread Recipe. If you do not wish them to be chewy, use the Indian fry bread recipe. Gluten Free Puff Pastry Recipe

I have had many requests for a gluten free puff pastry recipe that does not take 3 days to make. This one can be made in one day and used for pastries like Danish as well as savory dishes such as beef wellington. One of my cookbook recipe testers stated, “Some things are worth waiting/working for.”

Phyllo Dough is very thin sheets of dough. Even though both recipes are actually gluten free puff pastry, it is the closest thing we can use in gluten free baking. There are differences between the two recipes. Some of the differences in this gluten free puff pastry dough recipe is that itĀ contains butter in the dough, more flour in the butter block, less butter for the butter block, much more yeast in the dough, and the addition of eggs. Once the butter is added and folded, there are only three rolls and folds to perform. You only have to fold in half or in thirds, no fancy envelope folds. Pumpkin Yeast-Risen Gluten Free Donuts (Picarones)

I have been wanting to make some yeast raised gluten free donuts, but was so excited when I discovered picarones. They are also risen donuts, but made with a sweet squash (pumpkin in this case) and sweet potatoes. They are also known as Peruvian donuts as they are popular in Peru.Ā You can make these gluten free donuts using fresh or canned pumpkin. Just note that fresh pumpkin tends to vary in moisture and may not turn out the same. Meanwhile, enjoy these delightful treasures. Picarones leave a lasting impression to tourists who visitĀ Peru. Gluten Free Cream Puff Recipe: Rings with Caramel Whipped Cream – Paris-Brest

Pate choux in French is a dough made simply with eggs, flour, and sugar. In America, this dough is used for cream puffs. This particularĀ gluten free cream puff recipe is shaped as rings instead of the typical puff and is filled with a caramel whipped cream. The real Fench name for this dessert is Paris Brest.Ā They make a spectacular presentation. I added toasted almond slices to mine and a sprinkleĀ of confectioners’ sugar. You can use regular whipped cream and add strawberry sauce, as I did in my original gluten free cream puff recipe (see below link). Enjoy! Gluten Free Blueberry Coffee Cake

This gluten free blueberry coffee cake may be made three different ways. You can use canned blueberry pie filling and layer it as seen in the photo below and add an optional glaze. You can use fresh or frozen blueberries and fold them into the batter. Lastly, once you fold the blueberries into the batter you can top it with the streusel topping recipe I have supplied below.Ā I chose the quickest method, pie filling, and it was delicious. Enjoy this blueberry coffee cake, no matter how you assemble it. I have included instructions on how to bake it in a 9-inch round pan, 9 x 9-inch square pan, or see the tips section for making a larger one in a 9 x 13-inch pan.
