I am trying to cut dairy out of my diet a little bit at a time but miss my rich chocolate ice cream recipe. It’s one of my husband’s favorites, too. I have created several almond milk ice cream recipes, but today I incorporated the raw almond milk recipe into this dairy-free, gluten free, raw chocolate ice cream recipe and made it richer and creamier. It is high in protein compared to regular ice cream. You can make this recipe by using almonds or a lower protein version that is nut-free. I knew I had duplicated my dairy version perfectly once I saw the same consistency before it was frozen in the ice cream maker, just like homemade pudding before it sets in the refrigerator! Creamy Asparagus and Potato Soup

I knew I had to use up the asparagus I had in the frig. I decided to make a creamy asparagus and potato soup. Out of all my gluten free soup recipes that are creamy, I find this one to be the healthiest. When deciding on a thickener I considered using a gluten-free sour cream and Greek yogurt, but remembered what Gluten Free Chef Rob mentioned about thickening things naturally. I already had some boiled potatoes in the frig which I added in, but you can add fresh potatoes to this recipe all in one pot. I usually use potatoes in sweeter soups such as my Zucchini Mango Soup Recipe and Butternut Squash and Apple Soup, but this turned out wonderful, – not too much asparagus, just right, and nice and savory! Gluten Free Sauteed Napa Cabbage

I have been doing very well on my gluten free diet; yet another gluten free meal! I had a Napa cabbage in my frig waiting to make another batch of gluten free potstickers, but never got around to it. I did not have another Napa cabbage recipe and thought that sauteed Napa cabbage would be a way to make a quick meal. My intention was to eat it all up as a main dish, without adding anything to it, but I was starving and because of the tamari sauce it really needed to be served over rice, which was perfect. So, I thought since I had leftover roast, already sliced, why not add some of that in, as well. It was great! You can keep this recipe vegetarian/vegan, but I am sure it would be fantastic with chicken or pork (chops or bacon), as well, or over rice or noodles, plain! Gluten Free Asparagus Prosciutto Risotto

On a gluten free diet many of us eat a lot of rice. Gluten free risotto is a nice change. I am getting tired of the same old rice dishes and wanted to mix things up a bit. The only risotto recipes I have taste-tested were in fine Italian restaurants, but never cooked it myself. Imagine that! And I’m half Italian! Our family always ate the same asparagus recipe, boiled, and dipped in mayonnaise while eating. Traditional risotto includes parmesan cheese cooked into the rice. It makes it creamier, though it is pretty creamy alone because of the starch content of the arborio rice.  However, because prosciutto is already very salty I opted on just topping the rice off with a little parmesan cheese. Gluten Free Cucumber Salad with Creamy Dill Salad Dressing

When I visited Los Angeles in the past, I loved going to a this little hole in the wall Greek restaurant that served a great cucumber salad with a creamy dill dressing. I had to recreate it! I don’t know why I didn’t years ago. It is wonderful!  I did however use green onions instead of yellow onions and I like it much better! They did not use carrots, but I like a little color once in awhile. You can use a gluten-free Greek yogurt or sour cream. Leftovers taste even better! Whether serving a crowd or just a few people, nachos are always a big hit. With this gluten free nachos recipe you can add your favorite toppings, from olives to jalapeno peppers, from sour cream to guacamole. Of course, a good cheese sauce is a must. You can either add cheese and melt in the oven or microwave, or make a homemade cheese sauce. If you wish to kick it up a notch, add chili powder, onion powder, and garlic powder. We are taking some family members out for dinner tomorrow night, but wanted to serve an hors d’oeuvre before we leave for dinner. I needed to satisfy a gluten-free diet as well as a regular diet. Gluten Free Chicken and Snow Peas

I purchased some snow peas at the market today because I was craving stir fry. Snow peas are very nutritious. Check out their nutritional facts. I searched and searched online for a chicken and snow peas recipes, but every recipe I came across called for ingredients that I did not have on hand. I had no rice vinegar, no fresh ginger, no apricot preserves, no cashews, no water chestnuts, no bamboo shoots, no peanut oil, no sesame oil, no almond flavored liqueur and no mushrooms. I got creative instead! My husband and I really enjoyed this dish. I use chicken breasts instead of whole chicken parts for lower fat content. This recipe has a slight hint of peanut, sweetness and tang, just in the right proportions. Some stir fry recipes just do not have enough sauce, in my opinion. To me, there is nothing worse than have a bunch of dry rice left to eat. I believe this one has the perfect amount of sauce. Try it and let me know what you think!
