Not only can you have traditional gluten-free egg rolls, but you can have an even crispier, open-faced version. They thoroughly satisfy the need for crunch. Easy Gluten Free White Bean and Chicken Chili
White kidney beans may be difficult to find in your local store, but you can use any white beans to make this flavorful chicken chili. I don’t know what it is about this recipe, but I am addicted to it! It has just the right amount of everything…garlic, sweetness, tang, broth, and heat. I’ve made this about three times now, but I kept forgetting to share it with you until now. I hope you enjoy it as much as we have. It’s so easy because you use canned beans! (I buy from Vitacost.com. I recently bought some for half off!) Continue reading “Easy Gluten Free White Bean and Chicken Chili”
Gluten Free Holiday Green Beans
While green beans are gluten free, not all brands of bacon are. I’ve been making this bacon and onion green bean casserole during the holidays for decades. It’s my favorite dish that I just can’t live without. My family loves it because I don’t skimp on the bacon. There’s nothing worse than being one of the last ones to dig in and have to dig for bacon. I hope you enjoy this recipe as much as my family has. Continue reading “Gluten Free Holiday Green Beans”
Gluten Free Chicken Cordon Bleu
I have only had chicken cordon bleu once in my life, a matter of fact, it was when I was still dating my husband, back in the 70s! Making gluten free chicken cordon bleu was a breeze. It’s not much more difficult than breading chicken. However, it’s delicious! My version uses an herb prosciutto mix. However, you can use slices of prosciutto instead, to make it easier, which is the traditional method. I enjoyed the extra herbs, though. Plus I had some leftover from my Pork on Pork recipe. Pressure cookers went out of use decades ago, but for those of us who still own one, it’s time to dust it off. Why waste energy when you can cook meat to fork-tender in minutes? Let’s bring back pressure cooking! I have an old Presto Pressure Cooker, but they sell an extremely similar version, still at a great price. Stovetop Fruit & Champagne Sabayon – Creme Brulee-Style
Sabayon is French for a light, whipped custard containing sweet wine or champagne. In Italian it is called zabaione. You can become extremely creative with this dessert. I added some caramelized fruit and topped it creme brulee style. You can use fresh fruit, but when not in season, canned peaches will do or a little pie filling. Below, I have shared the recipe as well as the different sweet sparkling wines you can use in this naturally gluten free sabayon creme brulee. It’s a perfect dessert to serve to those who are gluten-free when you’re not, as it doesn’t call for any special ingredients. I discovered how to make mayonnaise much faster than traditional methods. I’ve tried using a high-powered mixer and food processor in the past, but they are extremely slow compared to this method. Using an immersion blender is the key! There are infinite variation possibilities. See the “Tips” section for suggestions.
