I’ve been a bit nostalgic lately after seeing Rain: A Tribute to the Beatles. I’ve been playing old songs in my head ever since. Remember Simon & Garfunkel’s hit song, “Parsley, Sage, Rosemary and Thyme”? Well, these wonderful seasonings can make your slow cooker rump roast a hit, as well. And it can easily be made gluten free. Continue reading “Gluten Free Slow Cooker Rump Roast”

Gluten Free Oven Maple Honey Chicken Wings
In preparation for Super Bowl Sunday, I began experimenting with chicken wings. Out of all of my Super Bowl Sunday Gluten Free Recipes, the most popular is my Bacon Wrapped Honey Chicken. Gluten Free Cheese and Spinach Gnocchi
Tuesday is National Cheese Lover’s Day. So, I thought I would share my latest gluten free recipe with you that contains cheese. It doesn’t contain everyday cheese, but either cottage cheese or ricotta cheese (which looks a lot like cottage cheese, but has smaller curds). It’s delicious!
I used 4% fat cottage cheese and chopped the curds up a little smaller. However, it appears pureeing it in a food processor would make it easier to roll. I also used Parmesan cheese in this recipe. I adapted the same recipe that I found in this month’s Sunset magazine. However, I use much less Parmesan and of course, gluten free ingredients instead of glutenous all-purpose flour. Meanwhile, you’ll have fun learning how to roll the gnocchi, which is the best way to make them. It leaves a nice sized space in which the sauce is trapped. When they are rolled, they are also less chewy. Check out the video on how to roll gnocchi. Continue reading “Gluten Free Cheese and Spinach Gnocchi”

I have provided an authentic recipe below, but feel free to use less oil to reduce calories. Continue reading “Gluten Free Beef Stir Fry with Broccoli (Lower-Fat Option)”

Gluten Free Barbecue Sauce Without Tomatoes
Again, in an effort to consume loads of beef we were given, I created a new barbecue sauce without tomatoes, gluten-free, of course. A little variety is the spice of life, right? Molasses along with sugar and salt is a great tomato-free substitute for ketchup when cooking. Skip the hot sauce and cayenne to create a milder version.
