I cannot tell you how many times, prior to be on the gluten free diet, that I had taquitos that were flavorless! Added garlic, chicken broth and chiles (skip the chiles for gluten free kids) make these gluten free taquitos very flavorful. My oldest sister, who is quite the culinary critic, loved these, evidenced by her second helping. You can make these corn free  by using gluten free flour tortillas (see my gluten free tortilla recipe or one brand of gluten free flour tortillas). Don’t know what to do with over-ripened bananas? Make fried bananas! Fry them up in about 5 minutes and top them your favorite topping or the buttery sweet sauce straight from the pan. It’s truly an easy gluten free dessert recipe you cannot go wrong with. It’s a non-alcoholic version of bananas foster. Next time I make this recipe I’d like to try dredging the cut side of the bananas in almond flour before frying. That just sounds perfect to me. Wish I would have thought about it sooner. Enjoy! I keep hearing rave reviews about every homemade dulce de leche recipe (thickened, sweetened milk). I even read one review that stated, “the only thing I would trade chocolate for.” I knew I just had to make some. It’s much like a caramel sauce, but not as sweet and without the concern of barley malt sometimes found in caramel coloring. However, caramel coloring is usually made from corn. That’s another thing I like to avoid when at all possible, corn, and especially corn syrup which is sometimes called for in a dulce de leche recipe. Gluten Free Beef Faijitas

This gluten free beef faijitas recipe is one of two faijita recipes on this site. You can compare it to the other faijita recipe to decide which you would like best. Either recipe goes great with homemade gluten-free tortillas. This one is close to the Chili’s knock-off recipe, but no marinating needed and the ingredient amounts are different, as well as vinegar as a substitute for lime juice. You can use any color peppers you wish, but definitely add in some green along with other colored peppers. I received a couple of Udi’s Gluten Free Pizza Crust to review. Because I am allergic to tomatoes, I often end up having a no sauce pizza or a pesto pizza. This time I came up with a sauce I can have, taco sauce without tomatoes! Why didn’t I ever think of that before, I do not know why!  My husband tasted my pizza and liked it better than his!  This recipe is much lower in sodium than most pizzas, too! Udi’s gluten free pizza crust made it delicious, as well! Now when you don’t have time to make your own gluten free pizza dough, you know what to buy.

Gluten Free Beef Tostadas

Gluten-free Beef Tostada

This is a fairly easy, yet a tasty gluten-free recipe. You can either purchase pre-made gluten-free brown rice tortillas, which I did this time from Trader Joe’s, or you can make your own. I have included the link to my white rice gluten-free tortillas below. If you are cooking for kids you’ll need to adjust the heat by reducing the chili powder and cumin. If you like it real spicy, then by all means add more! This recipe is set at a medium heat. Often stewed tomatoes are added to tostadas, but since I found out I am allergic to tomatoes I just add lots of spices and vegetables. Definitely consider adding tomatoes to yours! Gluten Free Chicken Enchiladas

This recipe can be made with gluten-free low-sodium tortillas or regular gluten-free tortillas. Regular ones are much higher in sodium than the recipe I provide. I made these enchiladas with two different sauces, one for me and one for my husband. He loves the traditional sauce. Many of you may have a particular favorite already in mind. I offer a simple alternative sauce under the many “Tips” I list below. I used to make enchiladas with plain chicken and load it with cheese for flavor, but have learned to give them flavor without the extra calories and cholesterol. You can do both, though.
