Fork Tender Gluten Free Pork Ribs and Pulled Pork Recipe

You can serve these ribs as they are (boneless) or you can shred the meat and use it for a pulled pork sandwich because they are fork tender! You will not need a knife for these babies! I’d like to use the term “fall off the rib tender” but they are boneless. I enjoy pulled pork sandwiches with coleslaw atop a gluten-free roll and additional BBQ sauce. Since I am allergic to tomatoes I use my quick and easy homemade gluten-free chipotle sauce and Worcestershire sauce. You may consider using my homemade gluten-free barbecue sauce recipe that I created for my husband which is lower in sugar by using agave syrup and Worcestershire sauce instead of brown sugar. It’s very flavorful and has a hickory taste! Despite my tomato allergy, I couldn’t resist taste tasting the sauce while cooking! Oh, how I miss I good barbecue sauce!

Rich Chocolate Ice Cream for Machine (Regular or Dairy Free)

This chocolate ice cream recipe is just to die for! I double the recipe and make it in my 2 qt. Cuisinart Ice Cream Machine. It is the richest ice cream I have ever tasted! The original recipe I tried earlier had less non-fat milk and more half and half. That was way too rich! Gluten Free Blackberry Sauce for Ice Cream and More

My father came for a visit recently and he just loves homemade vanilla ice cream. I only like vanilla if has a topping, though. So, I had some fresh blackberries that were not very sweet. I sweetened them up a tiny bit by making an ice cream topping. It is made with fresh blackberries, a little organic blueberry fruit spread and agave syrup. It is not very sweet, but the fruity flavor combined with the sweetness of the ice cream is just perfect. I enjoyed it, as did my other guests. I was watching “Paula’s Home Cooking” on The Food Network channel the other day, and Paula showed how to make Chocolate Covered Potato Eggs (for Easter). Her recipe had a white filling and inspired this chocolate truffle recipe with walnuts I just created. My favorite See’s Easter egg has a chocolate cream and walnut filling, therefore, this is what I made today. I added cocoa powder and walnuts; substituted stevia and agave syrup for the powdered sugar; and changed its shape into the typical round truffle. This is a healthier truffle recipe than most. I dipped some in chocolate and froze them; rolled others in unsweetened cocoa powder; and others in walnuts. My husband found it hard to believe it contained mashed potatoes. Give this recipe a try.
