Gluten Free Panzanella Salad

This is one classic Italian dish that I did not grow up with, but absolutely love. You may mistake this gluten free panzanella salad for a traditional salad, but it is heartier than that. Rather than topping each salad with a few croutons, a panzanella consists of many croutons tossed within the salad. In addition, they typically do not contain lettuce. Besides the recipe below, one of my favorite panzanella salad recipes include finely diced tomatoes, hearts of celery, diced seeded cucumber, red and yellow bell peppers, and some fresh, minced garlic and basil. Gluten Free Oat Sandwich Bread from a Bread Machine

I am so excited about this recipe! It is the best gluten free bread machine recipe I have developed thus far. This gluten free oat bread machine recipe works perfectly in the Breadman BK1050S, which has a Gluten Free setting. The bread turns out soft and spongy just like the best oat bread made with gluten. It is perfect for sandwiches and is free of tapioca flour. I have experimented and baked quite a few versions of gluten free bread in this machine, and this is the only one that turned out perfect! I am on a new diet and once a week I have to eat beef liver. I haven’t eaten liver, besides as pate (cracker spread) in decades. The only way I used to be able to tolerate liver is by cooking it with bacon and onion. However, I really was looking for a healthier way to consume it.
