Perfect for Memorial Day or a summertime barbecue. this grilled corn on the cob recipe using a slightly spicy, barbecued flavored butter is fairly easy to make and is abundant in flavor.

Grilled Corn on the Cob with BBQ Butter
A recipe for grilled corn on the cob with barbecued flavored butter, a real treat!
Ingredients:
- 8ears yellow corn
- 2 Tablespoons butter (or gluten-free margarine)
- 1/2 cup hopped yellow onion
- 2 cloves garlic, minced or grated
- 1 teaspoon gluten-free Hickory Liquid Smoke (Wright's)
- 2 teaspoons smoked paprika (McCormick's)
- 1/2 teaspoon cayenne powder
- 1/4 teaspoon ground cumin
- 1 tablespoon chili powder
- 1/2 cup water
- 12 Tablespoons (1 1/2 sticks) butter (or gluten-free margarine - Earth Balance is dairy-free)
- Black pepper (and salt if using unsalted butter)
For the BBQ Butter:
Instructions:
- Preheat a skillet with 2 tablespoons butter.
- Add onions and saute until lightly tender, about 3 minutes.
- Add garlic and saute for 30 to 60 seconds.
- Remove from heat, pour in liquid smoke, and stir.
- Add smoked paprika, cayenne, cumin and chili powder; and stir.
- Return to heat and cook for 1 minute or until fragrant.
- Add water and cook until most of the water evaporates.
- Add 1 1/2 sticks of butter and heat over medium heat to melt.
- Add onion mixture and stir.
- Remove from heat and set aside to cool and puree in a blender; or add to a heat-proof bowl and use a hand-held immersion blender.
- Season with salt and pepper, to taste. Refrigerate until corn is grilled and bring to room temperature if refrigerated for a long period.
- Preheat your grill to medium heat. If you have a gas grill with two or three sources of heat, preheat only the area you need.
- Pull the husks of the corn down to the bottom, but do not tear them off.
- Remove all of the silk from the corn and discard.
- Bring the husks back up to the top to cover the corn.
- Place the corn on the grill, cover, and grill for 15 to 20 minutes, turning each cob over twice.
- Test for doneness by poking a few kernels. When they are soft and tender, they are done.
- Once the cobs are cool enough to handle, remove husks and serve with BBQ Butter below.
