Gluten Free Lentils and Italian Sausage

Nothing like a good lentils and Italian sausage recipe. Someone sent me a bunch of gluten-free sausages during the holidays which I had frozen. I had contemplated what I should cook with them. I ended up making an Italian dish that is customarily served on New Year’s Day, lentils and sausage, which symbolizes prosperity for the upcoming year. With added seasonings and vegetables, it turned out very tasty! I have to say, this is one of my new favorite Italian recipes. You could even add more broth and make it a soup! Gluten Free Chicken and Snow Peas

Image: Chicken Snow Peas and Carrots

I purchased some snow peas at the market today because I was craving stir fry. Snow peas are very nutritious. Check out their nutritional facts. I searched and searched online for a chicken and snow peas recipes, but every recipe I came across called for ingredients that I did not have on hand. I had no rice vinegar, no fresh ginger, no apricot preserves, no cashews, no water chestnuts, no bamboo shoots, no peanut oil, no sesame oil, no almond flavored liqueur and no mushrooms. I got creative instead! My husband and I really enjoyed this dish. I use chicken breasts instead of whole chicken parts for lower fat content. This recipe has a slight hint of peanut, sweetness and tang, just in the right proportions. Some stir fry recipes just do not have enough sauce, in my opinion. To me, there is nothing worse than have a bunch of dry rice left to eat. I believe this one has the perfect amount of sauce. Try it and let me know what you think! Chocolate Almond Milk Ice Cream Recipe

Chocolate Almond Milk ice Cream Recipe

I adjusted my sinfully rich chocolate ice cream recipe to this much healthier version, even higher in protein, plus tons of fiber, all without the refined sugar and cow’s milk though it does contain eggs. It is still very delicious for such a healthy ice cream recipe. You can make chocolate, raw almond milk ice cream, chocolate raw pecan milk ice cream, chocolate raw hazelnut ice cream, or whichever nut you choose. Gluten Free Strawberry Chicken Salad

Image: Gluten Free Strawberry Chicken Salad Ingredients

I usually make this gluten free chicken salad recipe with apples, but did not have any, therefore, substituted the apples with strawberries. It turned out great. Strawberries are not quite sweet enough now due to the season, but in a few weeks they will be. By adding a little stevia, which I do even in my apple chicken salad recipe, it sweetens up just right. You can use this chicken salad atop a salad, in a sandwich, or on celery sticks or crackers for an appetizer. This recipe is gluten-free, sugar-free and low-cal if you use non-fat Greek yogurt instead of mayonnaise. A mixture of both is great, too! Continue reading “Gluten Free Strawberry Chicken Salad”

Gluten Free Macaroni and Cheese

Image: Gluten Free Macaroni and Cheese

My sister makes the best macaroni and cheese anyone has ever tasted. I recently asked her for her recipe. She is one of those that does not measure anything, but with some thought, she was able to come up with some approximations. I turned it into a gluten free macaroni and cheese recipe using a variety of gluten free pastas and topping it off with homemade seasoned gluten free bread crumbs. Some like the bread crumbs seasoned and other do not. What will you make? Continue reading “Gluten Free Macaroni and Cheese”

Gluten Free Onion Rings Recipe II

This gluten free onion rings recipe is sweetened with stevia, salted with sea salt and dairy- free. UPDATE: I now use Gluten Free Chef Rob’s recipe which calls for gluten-free beer. However, you can make it almost just as good using sparkling water. It just has a little less flavor and you have to fry them longer to make them crispy. They’re super crispy! Here’s the link – Tri-Spiced Gluten Free Onion Rings with Dipping Sauce.
