Low-Sodium Soft Gluten Free Corn Tortillas

Homemade Gluten Free Low-Sodium Corn Tortillas

I finally got around to making the gluten-free soft corn tortilla recipe from Terry Hope Romero’s “Viva Vegan!” cookbook. They are just wonderful! I wanted to share more details with you so that you will know exactly what to expect. This gluten-free corn tortilla recipe is so easy to make with a tortilla press, though you can do it by hand. Low-Sodium Gluten Free Bread Made with Expandex

Looking for a lighter gluten free bread recipe? The first time I made my gluten-free oat bread recipe I used non-fat milk. This time I used water, less salt, and replaced 1/4 cup of the oat flour with 1/4 cup of Expandex. It has the texture of real white bread, but just slightly heavier because it is moister; has a little heavier crust, and is made with oat flour which is a heavy flour. It makes a wonderful gluten-free sandwich bread! When warm or just cooled it has the texture of white bread. Once it cools completely it has the texture of sliced sourdough bread. This bread makes wonderful gluten free bread for sandwiches, especially for kids! Continue reading “Low-Sodium Gluten Free Bread Made with Expandex”

Rich Gluten Free Banana Ice Cream

Banana nut ice cream is one of my top 5 favorite ice creams! I created this recipe for my holiday guests and they all enjoyed it very much. My sister, who professes she will not touch a banana, even enjoyed it! I made this banana ice cream in my ice cream maker, but almost ice creams can be made just by freezing it in an airtight container. I hope you enjoy this recipe as much as we have. Topped with homemade gluten-free hot fudge is heavenly! Continue reading “Rich Gluten Free Banana Ice Cream”

Gluten Free Oat Bread

I created this gluten free oat bread recipe to test out Cream Hill Estates’ Lara’s Gluten Free Oat Flour, but oat bread is already one of my favorites.  Oats are known to lower cholesterol, as well.  In a gluten-free diet we need fiber wherever we can get it, therefore, this is a good choice in a gluten free bread.  It is of medium weight, not as light as I wished for, but I will work on perfecting this recipe.  It is moist, though, which is what I was hoping for.  Enjoy!

Creamy Mimosa – Naturally Gluten Free

Image: Gluten Free Creamy Mimosa

This mimosa recipe is naturally gluten-free. Though I am allergic to oranges, my guests enjoy mimosa for Christmas breakfast. One of my guests mentioned that the best mimosa she ever had was at a resort. I asked it was a creamy mimosa, and sure enough it was. So, I added a a splash of whipping cream to the blend and everyone loved it. What a perfect addition to any mimosa recipe! It created a frothy, creamy head. That particular guest ended up adding a bit of sugar to her glass, though. Later, I found a recipe online that did include sugar. Below is the recipe I made. Want to really wow your guests? Use fresh squeezed orange juice, strained. Continue reading “Creamy Mimosa – Naturally Gluten Free”

Gluten Free Mint Chocolate Layered Cheesecake

If you wish to make to make a plain cheesecake without using any graham crackers for the crust, see my Gluten Free Cheesecake Recipe with optional chocolate topping. Today’s recipe is a Chocolate Cheesecake, layered with plain cheesecake and chocolate mint cheesecake, and then swirled with both on top. It looks gorgeous, yet is so easy to create this effect. I added the mint for a Christmas touch, but you can skip the mint all together, as it contains plenty of vanilla extract. Continue reading “Gluten Free Mint Chocolate Layered Cheesecake”

Gluten Free Tuna Melt

I have never had a tuna melt before, but decided I could make a gluten-free tuna melt without cheese!  Of course, you can add cheese, if you desire. I wanted to add fish to my diet. I really do not like fish very much. I suppose there is a little child still left in me! Tuna melts are a great way to disguise the taste of fish, which may be a great way of getting kids to eat tuna that do not. Continue reading “Gluten Free Tuna Melt”

Gluten-free Meatloaf Muffins

A friend of a friend shared this recipe with me, but I had to alter it to make it gluten-free.  It can also be made dairy-free, if necessary. I added an alternative sauce, too! You really can use any sauce you like: spaghetti, Alfredo, pizza, brown gravy, etc. You also can add sauteed onion for additional flavor, especially if not using any sauce at all. You can remove any ingredients that you do not think children may enjoy. I hope you find this recipe useful. It is great for freezing, too! You can defrost as many as you need and reheat.
