Himalayan Red Rice Recipe II
Recently I posted a Himalayan Red Rice Recipe with a mixture of Himalyan red rice and white rice, but it was more on the plain side, made with chicken broth (or vegetable broth) and onion. Himalayan Red Rice Recipe
This Himalayan red rice recipe is great with added heat, such as gluten-free hot sauce or gluten free chipotle sauce. It is almost reminds me of red beans and white rice, with a slight nutty flavor. However, I would definitely use red rice alone in soup for added protein and fiber. Himalayan red rice is formally known as Bhutanese red rice, but because it is grown in the Himalayan Mountains most people refer to it as Himalayan red rice. It is slightly sticky after cooking and contains more bran than brown rice. It is “rich in B vitamins, iron and calcium. The reddish color of red rice is due to an antioxidant called anthocyanin, which is currently being studied in relation to the alleviation of chronic health conditions.” * Himalayan red rice is not the same as red yeast rice which is associated with the same side effects as statin (high cholesterol) drugs. Gluten-Free Breaded Zucchini Kabobs
My best recipes are created when I am hungry, and this one is no different. My husband and I loved these broiled, breaded, gluten-free zucchini kabobs! Making them as kabobs just dressed them a bit more, but you can definitely make them separately by using toothpicks instead of kabob sticks. Gluten Free Zucchini Casserole
I usually make this gluten free zucchini casserole without any seasoning, as zucchini is flavorful enough on its own, but adding a bit of smoked paprika made it very tasty! Ensure the smoke paprika you use is gluten-free, as some items that contain smoke flavor are made by using gluten to carry the smoke. You could really get a wonderful flavor by adding cooked bacon. Oh yum! I would use this when I had guests, but not as an everyday vegetable, as cannot afford the calories! – but oh, how I wish I could! That just sounds so yummy! Gluten-Free Basil Grilled Cheese Sandwich
Mid business taxes, and in a rush for a quick lunch I popped my head in the frig for a quick gluten-free sandwich and saw some cheddar cheese. I haven’t had a grilled cheese sandwich in a couple of years, but just didn’t want a plain one, but one more on the style of California cuisine. I pictured sautéed onion and roasted peppers, but no time for that! I decided to spread my bread with some basil paste and layer each slice with cheddar cheese and plop it in the frying pan. Great and fast! I loved it, but did miss the sautéed veggies! Just remember, a gluten-free grilled cheese sandwich doesn’t have to be plain. Add any of your faves, including meat, such as chicken, bacon, etc. If you’re in a rush, this one is sure to please!

Beets and Pear Salad
This fresh beets and pear salad was a delightful change. Beets are one of the richest sources of glutamine, a detoxifying amino acid which is essential to the health of the intestinal tract, among other health benefits. Those with celiac disease, IBS and other digestive issue should benefit greatly from beets, but if you cannot digest raw fruits and vegetables well, use very ripe pears and well cooked beets; or save this recipe when you can. Gluten Free Beef Faijitas
This gluten free beef faijitas recipe is one of two faijita recipes on this site. You can compare it to the other faijita recipe to decide which you would like best. Either recipe goes great with homemade gluten-free tortillas. This one is close to the Chili’s knock-off recipe, but no marinating needed and the ingredient amounts are different, as well as vinegar as a substitute for lime juice. You can use any color peppers you wish, but definitely add in some green along with other colored peppers. Gluten-Free Steak Marsala with Onion and Mushrooms
One of my favorite entrées is chicken or veal marsala. I had the craving, but no chicken or veal in the house. Oh my! Onto another experiment I went…and here it is, steak marsala, gluten-free, of course! After making the test recipe for just my husband and I, we had a guest over and I made it again. Gluten Free Baked Cheese Puff Balls
I never got around to posting a recipe for Super Bowl, but I thought gluten-free cheese puffs would make a nice appetizer or snack for today’s game! This particular gluten-free cheese puffs recipe is not like the crispy snack cheese puffs, but more of a cream puff pastry. They are very light.
