After visiting Mexico this summer, I was determined to find out how to make soft gluten free white corn tortillas. I usually buy Mission Super Soft White Corn Tortillas. They are much softer than their yellow corn tortillas, closer to flour tortillas, but with more fiber and obviously no gluten. However, if you prefer freshly made gluten free corn tortillas and arepas, without gum and preservatives, try this simple recipe. The special corn flour is easily accessible online and in specialty markets. You only need to add water and salt. You don’t need a tortilla press to make them; however it works with one. They say that cauliflower is the new kale for 2016. I don’t know about that, but I do know that it is the perfect substitute for high carb starches like rice and potatoes. This roasted cauliflower dish is the low-carb replacement for high-carb gluten-free breaded cauliflower. It’s not full of starch but provides the same flavor and texture. Gluten-Free Allergen-Free Devil’s Food Cake

Gluten Dairy and Egg-Free Devil's Food Cake Recipe

While developing recipes for my cookbook, I created a traditional Copycat Betty Crocker Devil’s Food Cake Mix recipe. At the time, I wasn’t sure on the theme of my cookbook. I thought I’d give an egg-free version a try. My husband who loves devil’s food cake enjoyed it as did I. The one recipe tester who tried it did not use a mixer, which would have made it lighter. She just mixed it all up in a bowl. As you can see in her photo, it still looks delicious, but a little dense. She really enjoyed it, even though she is not on an egg-free diet. She rated it 10/10 in texture, 9/10 in flavor, and 10/10 in appearance. Her husband thought it was too moist. Meanwhile, I hope you enjoy it as much as we did.

Gluten-Free Egg-Free Macarons That Melt in Your Mouth

Macarons are French egg white cookies, that if made properly will melt in your mouth. While experimenting with the latest egg substitute, canned bean liquid, I used it to make these melt in your mouth macarons. Who knew you could achieve perfection with egg substitute? Meanwhile, I filled mine with some leftover chocolate ganache. You can use a number of fillings from jam to peanut butter and confectioners’ sugar. Enjoy! While on vacation, we ate at one my favorite gluten free menu restaurants, PF Chang’s China Bistro. While this appetizer from their happy hour menu is not gluten free, allow me to explain why it’s not. The waitress spoke to the chef on my behalf. He said that the only reason why they don’t label it gluten free is because it is made on a grill that would pick of cross-contamination from gluten. Their peanut sauce may also contain gluten, but I didn’t ask. The appetizer is called Saigon Summer Rolls, also known as Vietnamese Rolls (Saigon is the former name of the current city, Ho Chi Minh City, in Vietnam.)
