Gluten Free Raspberry Muffins
These gluten free raspberry muffins are an all-time favorite in our house. You can use a cup-for-cup sugar substitute or regular sugar. Wish to make them with sugar, but less refined? Gluten Free Saigon Summer Rolls – Vietnamese Rolls with Peanut Sauce
While on vacation, we ate at one my favorite gluten free menu restaurants, PF Chang’s China Bistro. While this appetizer from their happy hour menu is not gluten free, allow me to explain why it’s not. The waitress spoke to the chef on my behalf. He said that the only reason why they don’t label it gluten free is because it is made on a grill that would pick of cross-contamination from gluten. Their peanut sauce may also contain gluten, but I didn’t ask. The appetizer is called Saigon Summer Rolls, also known as Vietnamese Rolls (Saigon is the former name of the current city, Ho Chi Minh City, in Vietnam.) Gluten Free Blueberry Mug Cake or Muffin (Sugar-Free Option)
While I have a few gluten free cake mug recipes, I had not yet developed a muffin in a mug recipe yet. Wanting a bit healthier version of the cake mug recipe, I decided to add a bit of flax seed meal to the cake recipe and add some blueberries. To make a cake version, substitute the 1 tablespoon of flax seed meal for 1 tablespoon additional flour. This gluten free blueberry mug cake makes a fast snack/dessert! Gluten Free Oat Milk Recipe
While you can purchase oat milk in your local grocery store, the oats used in that milk is most likely not gluten free. Due to oats growing in fields adjacent to gluten crops and multiple other reasons, regular oats can contain up to 10% gluten. You can make your own gluten free oat milk at home. It’s easy and less expensive. I notice a quart of organic oat milk costs $3.49 at my local grocery store. You may not be able to find organic oats, but you can make a quart and half for a little over $1.00; and it won’t contain any gum. Basic Basmati Rice Recipe
I was about to make some basmati rice (Indian white rice), but was wondering if soaking rice was healthier. I already soak beans and nuts to remove enzyme blockers. In my research, I discovered soaking basmati rice, as well as others, not only removes some nutrient blockers, it makes it easier to digest. In addition, the soaking speeds up the cooking process. You’ll appreciate the rinsing process because it removes so much of the starch that it makes this a fluffy, not sticky, basmati rice recipe. I use it with my Chicken Korma Recipe. Enjoy!
