Gluten Free Bear Claw (Almond) Coffee Cake

Double-Frosted Gluten Free Red Velvet Cake Recipe
This gluten free red velvet cake recipe is moist and luscious. Red Velvet is known for its richness. While not everyone has the time to make a three-layer, double-frosted cake, when you wish to impress guests, this is the cake to make. When time is short, make a single frosted cake and/or make a naked cake (no frosting on the sides). The cake, as well as frosting recipes, were raved about by my cookbook recipe testers. If you usually use ready-made frosting, you may never again.

Gluten-Free Allergen-Free Devil’s Food Cake
While developing recipes for my cookbook, I created a traditional Copycat Betty Crocker Devil’s Food Cake Mix recipe. At the time, I wasn’t sure on the theme of my cookbook. I thought I’d give an egg-free version a try. My husband who loves devil’s food cake enjoyed it as did I. The one recipe tester who tried it did not use a mixer, which would have made it lighter. She just mixed it all up in a bowl. As you can see in her photo, it still looks delicious, but a little dense. She really enjoyed it, even though she is not on an egg-free diet. She rated it 10/10 in texture, 9/10 in flavor, and 10/10 in appearance. Her husband thought it was too moist. Meanwhile, I hope you enjoy it as much as we did.

Naked Gluten Free Japanese Christmas Cake Recipe
In Japan, on Christmas Eve, they traditionally serve Christmas cake, made of sponge cake, covered in whipped cream and topped with strawberries. Sometimes it was decorated with chocolate or Santa Clause. It was a symbol of Western modernity and a high social status as they were expensive. Since it’s inception, these cakes have become affordable. They are also available in multiple variations, not just whipped cream and strawberries. I knew nothing about this tradition until Julie asked me for a sponge cake recipe so that one of her sons could make a gluten free Japanese Christmas Cake covered in Cool Whip for school.
