Gluten Free Baked Macaroni and Cheese Italian-Style (Baked Ziti)

Italian-Style Gluten Free Baked Macaroni and Cheese

This gluten free baked macaroni and cheese is basically a ziti recipe, but I can’t find any gluten free ziti pasta (straight tubular noodles, usually with grooved lines). So, I just renamed it, especially for those who are not familiar with Italian food. This is my go to recipe for unexpected guests. Sometimes I serve it the first day that my holiday guests arrive, as well. I’m usually too busy and exhausted to cook after cleaning the house and making sure everything is perfect. For guests, I use my Authentic Spaghetti Sauce Recipe which contains beef stew meat and Italian sausage. I always keeps some in the freezer. The dish in the photo below contains marinara sauce (tomato-based sauce without meat). I either make plain macaroni and cheese for myself, in a separate dish or add some pureed red bell pepper sauce since I am allergic to tomatoes. Gluten Free Cherry Apricot Coffee Cake

Last month, I used my butter cake recipe to make this beautiful gluten free streusel coffee cake recipe. I just added fresh fruit and streusel topping. Instead of using my usual Gluten Free All Purpose Flour Blend Recipe in the topping, I used my Self-Rising Cake Flour Blend Recipe. It created a higher rise and lighter topping. If you prefer, you can use the same flour as you do in the cake. In addition, you can create a tart instead of a cake, omit the streusel and dust it with confectioners’ sugar (see the photo below the recipe.) Enjoy! Braciole is a dish popular in Southern Italy such as Sicily. It is either spelled braciole or braciola. Most Italians use beef; however, when using chicken, it is pounded and stuffed with your favorite ingredients. In this case, I used prosciutto, spinach, and Mozarella cheese. Carob, Chocolate or Chocolate Chip Gluten Free Oat Crepes

Gluten Free Oat Crepes with Chocolate or Chocolate Chips

These crepes are simply amazing! I enjoyed making these gluten free oat crepes by halving the recipe and adding finely chopped carob chips (you can use any gluten free chocolate or chips) to part of the batter. To the other portion of the batter I added 3/8 to 1/2 cup of homemade ganache. Then I used the remaining ganache to spread on some of the crepes, along with peanut butter and sliced strawberries. To die for! What makes these crepes a healthy choice is that they are made without the use of high-carb white starch or gums. All you need is gluten free oat flour or ground oats. Enjoy.

Zucchini Pasta with Gluten Free Garlic Sauce

I have been making an effort to reduce the carbohydrates in my diet. I purchased a Spiral Vegetable Slicer and my first experiment was making zucchini ribbons. Using zucchini pasta instead of high carb rice or corn pasta saves a tremendous amount of carbohydrates. One medium zucchini contains only 6g carbs and 2g fiber. My favorite gluten free brown rice pasta contains 43g carbs and 2g fiber per 1/2 cup of uncooked pasta. If you enjoy zucchini, you will love this dish.
