Gluten Free Pumpkin Cornbread (Dairy-Free Options)
Though I am allergic to pumpkin, whenever I get the craving for it, I create a new recipe and have my husband taste-test it. I have never had pumpkin cornbread before, but it sounded so good. To create this recipe, I began with my Gluten Free Cornbread for Stuffing and simply substituted the milk with pumpkin puree. My husband gobbled up a piece of this gluten free pumpkin cornbread and asked for more. He didn’t realize it was cornbread at first. Once he had a piece topped with his usual margarine, he said it was moist, with a typical cornbread flavor and texture, with a slight taste of pumpkin. Gluten Free Pumpkin Mac ‘n’ Cheese with Optional Bacon
Similar to it’s baked cousin, this gluten-free macaroni and cheese recipe contains a bit of both pumpkin and cheese, but is made without egg. Gluten Free Caramel and Pecan Blondies
Blondies are dessert bars, blonde brownies. The cake portion traditionally contains flour, butter, brown sugar, baking powder, vanilla and eggs. Similar to chocolate brownies, they are a bit heavier but blonde in color. These decadent gluten free blondies are topped with dulce de leche (thick, rich caramel) and pecans. Gluten Free Paleo Peach Crumble
Sometimes there is confusion between crumbles, crisps and cobblers. They all contain a fruit filling topped with various ingredients. A crumble and a crisp have a crunchy topping. A crisp contains oats, where a crumble does not. A cobbler is topped with dough, much like biscuit dough. In an attempt to create gluten free popovers, my third batch turned out like dinner rolls instead, but I thoroughly enjoyed them.
