Ingredients
- 20 ounces chicken breasts thinly sliced, at an angle, into medallions (1-1/4 lbs.)
- 1-1/4 cups chopped yellow onion
- 7 ounces 3/4 cup drained, canned diced pimentos, reserving juice
- 3 cups gluten free low-sodium chicken broth (Substitute as much pimento juice as possible + 3 T BTB)
- 1-3/4 teaspoons Trader Joe’s Mushroom & Company multipurpose umami seasoning blend or more to taste
- 2 tablespoons brown rice flour for thickening
- 2 tablespoons water for thickening
- Salt to taste

Brown chicken fillets in preheated oil skillet over medium high heat. Remove from skillet and set aside.

Sauté onions until translucent and tender, about 8 minutes. Stir in drained pimentos and sauté it for 1 minute.

Add chicken broth, as much pimento juice as possible, mushroom seasoning, and fried chicken; simmer until tender, about 25 minutes, over medium heat.

Whisk together the flour and water; set aside.

Bring to a roaring boil and slowly pour in the water-flour mixture, while constantly stirring. Cook over medium heat until thick, about 5 minutes.
Tips
*If you cannot access Trader Joe’s Unami Seasoning, you may use powdered mushrooms, salt, pepper, and a very few red pepper flakes.
