Gluten Free Corn Fritters with Sweet & Spicy Dipping Sauce

Southerners rejoice! You can still have your chicken and corn fritters, too. This gluten-free version is easy to make and tastes amazing!

Having these gluten free corn fritters for dinner may create feelings of guilt as these babies taste more like donuts than anything else. However, with the sweet and spicy dipping sauce (only slightly spicy), they do taste savory without garlic. Enjoy!

Gluten Free Corn Fritters

Southeners rejoice! You can still have your chicken and your corn fritters, too. This gluten free corn fritters recipe is easy to make and tastes amazing!

Ingredients:

    For the Corn Fritters:
  • 3/4 cup Carla’s Gluten Free Flour Blend
  • 1/2 cup gluten-free cornmeal (Bob’s Red Mill)
  • 2 teaspoons gluten-free baking powder (Rumford)
  • 1/8 teaspoon paprika, chili powder, or cayenne pepper
  • 1/4 teaspoon salt
  • 1 large egg, at room temperature,
  • lightly beaten
  • 2 tablespoons granulated sugar
  • 1/2 cup + 1 tablespoon buttermilk
  • 2 tablespoons (1/4 stick) unsalted butter, melted and slightly cooled
  • 3/4 cup corn (1/2 15-ounce can), drained
  • Neutral-flavored oil, for frying
  • For the Dipping Sauce:
  • 5 tablespoons gluten-free mayonnaise
  • 1-1/2 teaspoons honey
  • 1/2 to 1 teaspoon gluten free chipotle salsa sauce (Bufalo) (or 1 teaspoon honey + 1/2 teaspoon hot sauce)
  • For a Kid-Friendly Dipping Sauce:
  • Serve corn fritters with gluten-free thousand island or ranch dressing.

Instructions:

  1. To Make the Fritters:
  2. In a medium-size bowl, combine flour blend, cornmeal, baking powder, paprika, and salt; set aside.
  3. In a separate bowl, whisk together egg and sugar until sugar granules dissolve.
  4. Add buttermilk and whisk again.
  5. Slowly pour in melted butter while constantly whisking.
  6. Create a well in the center of the flour mixture and pour milk mixture into the center. Stir using a wooden spoon. The batter/dough will be thick.
  7. Add corn, fold in gently using a wooden spoon or spatula; set aside for 10 minutes.
  8. Preheat your deep-fryer or 2 to 3 inches of oil in a heavy skillet to 375°F.
  9. Working in batches, scoop dough using a 1-1/2 tablespoon spring-action scooper or heaping tablespoon. Place dough balls on a slotted spoon or skimmer, and gently place into oil. Hold the spoon in the oil for 5 to 10 seconds and then drop the dough into the oil. Cook for 4 to 5 minutes (longer for super crispy), or until nicely golden brown. Turn them over to brown both sides or continuously rotate.
  10. Remove the fried corn fritters from the oil, allow excess oil to drip over the heated oil, and transfer to a paper towel-lined plate.
  11. To Make the Sauce:
  12. Whisk together all three sauce ingredients. Serve sauce in small prep bowls on each plate of corn fritters.

Tips

Feel free to use equal amounts of flour blend and cornmeal, if desired. Just do not use more than that or you may need to add additional xanthan gum.

The All Purpose Gluten Free Flour Recipe calls for tapioca or cornstarch as one of the ingredients. I used cornstarch in this recipe, but you can tapioca if you prefer. Bob's Red Mill cornstarch is non-GMO.

For kids, serve with gluten free thousand island or ranch dressing.

  1. I made mine with only a few ingredients, 1:1 of potato starch and corn meal. Corn and Serrano peppers, sour milk and Sazon spice mix. Came out great, I found that all those ingredients weren’t necessary but I am sure it affects the taste, but mine came out golden, almost “tempora shrimp” type batter golden with the same texture. Thank you so the recipe.
