Gluten Free Italian Meatballs (Chicken and Sausage)
Before I discovered my tomato allergies, I enjoyed meatballs just like my Sicilian grandmother used to make. I still make sauce for my husband, though. He’s usually happy with Italian sausage, but I can’t seem to find good Italian sausages without nitrates. Therefore, I’ve gone back to making him meatballs. He loves them and I hope you do as well. Gluten Free Oven Maple Honey Chicken Wings
In preparation for Super Bowl Sunday, I began experimenting with chicken wings. Out of all of my Super Bowl Sunday Gluten Free Recipes, the most popular is my Bacon Wrapped Honey Chicken. This may beat that one, or at least tie it! These wings are first steamed in the oven and then baked to a crisp, while they remain tender and juicy inside. Gluten Free Matzo Ball Soup
About three years ago, my father’s lady friend and her daughter bought the ingredients to make my father matzo ball soup. They were going to use a packaged matzao ball mix. They had to leave early because my father became ill. So, they never got a chance to make it. I decided to give it a go. Instead of making their gluten version, I developed this gluten free matzo ball soup recipe and dropped some off at their hotel before they left. They raved about it, though they had to add some additional salt. (My Dad was on a low-sodium diet at the time.) Enjoy! Continue reading “Gluten Free Matzo Ball Soup”
Sweet & Spicy Gluten Free Soba Noodles & Chicken
Soba means “buckwheat” in Japanese. Many Japanese dishes contain soba/buckwheat noodles. King Soba offers safe, gluten free soba noodles in a variety of flavors. My favorite is their Buckwheat & Sweet Potatoes Noodles. Buckwheat noodles are so much healthier than rice pasta. I use them in stir-fry as well as other pasta recipes. The texture is amazing and holds up well. Just be sure to cook them al dente before frying them in this recipe. I usually use the Sweet Potato Soba Noodles. I just love the sweet flavor, even in savory dishes. They would be ideal for this dish as it is slightly sweet and slightly spicy. Sweetness with spiciness is a marriage made in heaven, in my book. Gluten Free Chicken Adobo
I was watching the Today Show and saw a segment on adobo chicken. Adobo is a Filipino method of cooking food in vinegar and soy sauce. I have had adobo chicken before and enjoyed it; therefore, it sounded wonderful. This is my version of gluten free adobo chicken which is closer to teriyaki chicken since it contains ginger. It may be cooked on the stovetop or in a crockpot. Enjoy!
