Similar to it’s baked cousin, this gluten-free macaroni and cheese recipe contains a bit of both pumpkin and cheese, but is made without egg. Gluten Free Raw Pumpkin Cheesecake Recipe

Douglas McNish makes a mean Raw Vegan Gluten Free Cheesecake. I started with his recipe and by the time I was finished, it developed into this lovely raw pumpkin cheesecake recipe. You will need a high speed blender to make this. There is no getting around it. If you are not fortunate enough to own one, note that there are lower cost alternatives to the VitaMix brand. Vegan Pumpkin Ice Cream

This is more of a sherbet than a vegan pumpkin ice cream, but is still extremely delicious for a diary free version. Since its development, I have discovered that adding one teaspoon of xanthan gum added to ice cream creates a more chewy texture. In this recipe you would need to mix about 1/2 teaspoon of gum with the oil. Note, that this is not a new recipe, but the original, published in 2010, seems to have vanished from this site. Enjoy!
