If you are watching your carb intake, using almond flour is a great way to cut back in addition to adding flavor. This gluten free tart crust is the perfect compliment to sweet or savory fillings. Avoid starch-filled crusts. Try using almond flour instead. This recipe is also egg- and gum-free. It’s delicious. I use it to make my Gluten Free Apple Almond Custard Tart and my creamy potato, onion and bacon tart.

Gluten Free Chicken Adobo

Chicken Adobo Egg Rolls

I was watching the Today Show and saw a segment on adobo chicken. Adobo is a Filipino method of cooking food in vinegar and soy sauce. I have had adobo chicken before and enjoyed it; therefore, it sounded wonderful. This is my version of gluten free adobo chicken which is closer to teriyaki chicken since it contains ginger. It may be cooked on the stovetop or in a crockpot. Enjoy!

Johnny cakes, also known as johnnycakes, jonnycakes, jonny cakes and hoecakes, are similar to pancakes, but they contain some hominy grits, or cornmeal, in this case. Using my recipe for gluten free bisquick or Betty Crocker’s store-bought brand, this recipe is easy to make and tastes delicious. It makes light and fluffy pancakes with the grains of corn. Feel free to substitute buttermilk with the recipe for homemade or dairy-free buttermilk by reading the tips section. Gluten Free Pumpkin Cornbread

Though I am allergic to pumpkin, whenever I get the craving for it, I create a new recipe and have my husband taste-test it. I have never had pumpkin cornbread before, but it sounded so good. To create this recipe, I began with my Gluten Free Cornbread for Stuffing and simply substituted the milk with pumpkin puree. My husband gobbled up a piece of this gluten free pumpkin cornbread and asked for more. He didn’t realize it was cornbread at first. Once he had a piece topped with his usual margarine, he said it was moist, with a typical cornbread flavor and texture, with a slight taste of pumpkin. Similar to it’s baked cousin, this gluten-free macaroni and cheese recipe contains a bit of both pumpkin and cheese, but is made without egg. The pumpkin provides accents of fall and a bit of sweetness. The leeks or onions are used as a substitute to add sweetness and savoriness. Best of all, the optional bacon makes everything taste even better. No matter how you choose to make this dish, everyone will be begging for more. Sometimes there is confusion between crumbles, crisps and cobblers. They all contain a fruit filling topped with various ingredients. A crumble and a crisp have a crunchy topping. A crisp contains oats, where a crumble does not. A cobbler is topped with dough, much like biscuit dough.
